Okra Masala is a mouth-watering and aromatic dish that boasts a burst of flavours. The dish is made by preparing fresh, tender okra in a spicy onion-tomato masala that is expertly blended with an array of fragrant spices. This simple recipe is made with everyday ingredients and is extremely easy to cook. It is a typical everyday side dish in many Indian homes and restaurants. The okra is cooked perfectly, and the masala adds a fiery kick to the dish. You can also find it being served as a side dish in Northern Indian restaurants, and it is often featured on Dhaba menus, where it is cooked to perfection and served hot and fresh.

Crispy Kurkuri Okra Masala
Ingredients
- 2 cups Okra Fresh
- 1 Medium Red Onions Fresh
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp dhania/coriander powder
- Salt As per taste
- 1 tsp curd
- 2 tsp rice bran oil
- 1 tsp mustard seeds
- 1/2 tsp mustard seeds
- A pinch of hing
- 1 red chilli
- 6-8 curry leaves
Instructions
- Wash the okra and chop it into equal-sized pieces. Chop the onions and add salt to taste.
- In a deep cooking vessel, heat 2 teaspoons of oil and add mustard seeds.
- After heating oil in a pan, add hing, jeera, red chilli, curry leaves, and sauté for 2 minutes once they sputter.
- Transfer the remaining oil along with the onions and cook until translucent.
- On high heat, add the chopped okra, spices, and salt. Cook for 3-4 minutes.
- Pour in the curd to prevent the okra pieces from sticking to one another. Add the curd to it to stop the okra pieces from sticking together
- Fry the okra on medium heat for 10 minutes to allow the spice powders to blend.
- Serve the crispy okra fry hot along with rice or flatbreads like rotis.
