Crispy Kurkuri Okra Masala
For the Crispy Kurkuri Okra Masala, wash and slice the okra into thin strips. Dip them in a batter besan, rice flour, spices, and water. Deep fry until golden brown and crispy. Separately, sauté onions, ginger-garlic paste, and tomatoes with herbs. Add the fried okra strips, mix well, and garnish with coriander leaves. Enjoy hot!

- 2 cups Okra Fresh
- 1 Medium Red Onions Fresh
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp dhania/coriander powder
- Salt As per taste
- 1 tsp curd
- 2 tsp rice bran oil
- 1 tsp mustard seeds
- 1/2 tsp mustard seeds
- A pinch of hing
- 1 red chilli
- 6-8 curry leaves
Wash the okra and chop it into equal-sized pieces. Chop the onions and add salt to taste.
In a deep cooking vessel, heat 2 teaspoons of oil and add mustard seeds.
After heating oil in a pan, add hing, jeera, red chilli, curry leaves, and sauté for 2 minutes once they sputter.
Transfer the remaining oil along with the onions and cook until translucent.
On high heat, add the chopped okra, spices, and salt. Cook for 3-4 minutes.
Pour in the curd to prevent the okra pieces from sticking to one another. Add the curd to it to stop the okra pieces from sticking together
Fry the okra on medium heat for 10 minutes to allow the spice powders to blend.
Serve the crispy okra fry hot along with rice or flatbreads like rotis.
