- 750 ml Water or Vegetable Stock
- 1 Teaspoon Salt
- 1 Medium Cucumber - Diced
- 200 g Cherry Tomatoes - Halved
- Β½ Small Red Onion - Finely Sliced
- Β½ Cup Fresh Parsley - Chopped
- ΒΌ Cup Fresh Mint - Chopped
- Β½ Cup Dried Cranberries
- Β½ Cup Toasted Pecans or Walnuts - Chopped
- 100 g Crumbled Feta Cheese - Optional
For The Dressing
- 4 Tablespoons Olive Oil - Extra Virgin
- 3 Tablespoons Fresh Lemon Juice
- 1 Tablespoon Honey or Maple Syrup
- 1 Garlic Clove - Minced
- 1 Teaspoon Dijon Mustard
- Β½ Teaspoon Sea Salt

Step 1: Cook The Wild Rice
