- 2 × 400g tins white beans Cannellini or Great Northern beans, - drained and rinsed
- 250 g cherry tomatoes - halved
- 1 large cucumber - diced
- 1 small red onion - finely sliced
- 1 red bell pepper - diced
- 100 g black olives - sliced
- ¼ cup fresh parsley - chopped
- 2 tablespoons fresh basil - chopped
- 2 garlic cloves - minced
- Juice of 1 large lemon
- 4 tablespoons olive oil - extra virgin
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ½ teaspoon chilli flakes - optional
Step 1: Prepare the White Beans
Drain the white beans thoroughly and rinse them under cold running water.
Allow them to drain well before adding them to a large mixing bowl.
Removing excess moisture helps the dressing coat the beans more effectively.
Step 2: Chop the Vegetables
Dice the cucumber and red pepper into evenly sized pieces.
Halve the cherry tomatoes.
Thinly slice the red onion.
Slice the olives.
Finely chop the parsley and basil.
