This vibrant Warm Lentil Salad combines tender lentils, colourful peppers, red onion, fresh parsley, zesty lemon juice, and aromatic Tandoori flavours. Ingredients
  

  • cups cooked lentils
  • medium red onions - diced
  • ¾ cup red pepper - diced
  • 3 tablespoons Patak’s Tandoori marinade
  • 6 tablespoons fresh lemon juice
  • ¾ cup fresh parsley - chopped
  • 6 tablespoons vegetable oil or olive oil
  • Salt - to taste
  • Freshly ground black pepper - to taste

Instructions
 

Step 1: Prepare The Lentils

  • Drain and rinse tinned lentils thoroughly if using.
  • Allow excess water to drain completely.
  • If using freshly cooked lentils, ensure they are tender but still hold their shape.
  • Set aside.

Step 2: Sauté The Onion And Pepper

  • Heat the oil in a large frying pan over medium heat.
  • Add the diced red onion and red pepper.
  • Sauté for 3–4 minutes, stirring regularly, until softened but still colourful.

Step 3: Add The Tandoori Flavour

  • Reduce the heat slightly if necessary.
  • Add the Tandoori marinade.
  • Stir until the vegetables are evenly coated.
  • Cook for about 1 minute to release the aromatic flavours.

Step 4: Add The Lentils

  • Add the cooked lentils to the frying pan.
  • Gently fold them through the spiced vegetables.
  • Cook for 3–5 minutes, stirring occasionally, until thoroughly warmed.
  • Avoid excessive stirring so the lentils retain their shape.

Step 5: Add The Lemon Juice

  • Remove the pan from the heat.
  • Transfer the warm lentil mixture to a large serving bowl.
  • Allow it to cool slightly.
  • Add the fresh lemon juice and gently fold through.
  • Taste and adjust the salt and black pepper if needed.

Step 6: Garnish And Serve

  • Scatter the chopped fresh parsley over the salad.
  • Give it one final gentle fold.
  • Serve immediately while the lentils are warm.
  • Serve alongside basmati rice or warm naan for a more substantial meal.
