Tropical Fruit Salad Recipe
This vibrant Tropical Fruit Salad combines juicy watermelon, sweet mango, pineapple, papaya, kiwi, dragon fruit and banana with a refreshing honey-lime dressing. Finished with toasted coconut and fresh mint, it is colourful, naturally sweet, refreshing and perfect for breakfast, brunch, picnics or a light dessert.

- 2 cups diced watermelon
- 1½ dragon fruits
- ¾ papaya
- 1 large mango
- 1 cup pineapple wedges
- 3 kiwi fruits
- 1 large banana
- 3 tablespoons honey
- ¾ teaspoon lime zest
- 1½ tablespoons fresh lime juice
- 3 tablespoons coconut chips or shreds - optional
- 2 teaspoons thinly sliced fresh mint
Step 1: Wash and Prepare the Fruit
Rinse all the fruit thoroughly under cool running water.
Dry the fruit carefully with a clean kitchen towel. Excess water can dilute the dressing and make the salad watery.
Cut the watermelon into approximately ¾-inch pieces.
Peel the dragon fruit, cut it into bite-sized pieces and set it aside.
Peel and remove the seeds from the papaya before cutting it into similarly sized pieces.
Peel the mango and cut the flesh away from the stone before dicing it.
Remove the pineapple skin and tough core, then cut the flesh into small wedges.
Peel the kiwi, quarter it lengthways and slice it into bite-sized pieces.
Leave the banana until near the end and slice it into approximately ½-inch pieces.
For the best Tropical Fruit Salad, aim for relatively similar-sized pieces so different fruits appear in every serving.
Step 2: Make the Honey-Lime Dressing
Add the honey to a small mixing bowl.
Add the freshly grated lime zest.
Pour in the freshly squeezed lime juice.
Whisk vigorously until the ingredients are well combined.
Taste the dressing and add a little more lime juice if you prefer a sharper finish.
Step 3: Toast the Coconut
Place a dry frying pan over medium heat.
Add the coconut chips or shreds.
Shake the pan regularly so the coconut toasts evenly.
Cook for approximately 2–4 minutes until lightly golden and fragrant.
Immediately transfer the toasted coconut to a small bowl and allow it to cool.
Watch the coconut carefully because it can burn quickly.
Step 4: Combine the Fruit
Place the watermelon, dragon fruit, papaya, mango, pineapple and kiwi into a large mixing bowl.
Add the sliced banana last.
If using red-fleshed dragon fruit, reserve a few pieces for garnishing if desired.
Gently fold the fruit together using a large spoon.
Avoid vigorous stirring to prevent bruising the softer fruits.
Step 5: Dress the Salad
Drizzle the honey-lime dressing evenly over the fruit.
Use two large spoons to gently toss and fold everything together.
Continue for only a few seconds, just until the dressing lightly coats the fruit.
Allow the salad to stand for a few minutes so the flavours can mingle.
For the freshest Tropical Fruit Salad, avoid dressing it too far in advance because the fruit can become softer as it sits.
Step 6: Garnish and Serve
Sprinkle the cooled toasted coconut over the top.
Scatter the thinly sliced fresh mint across the surface.
