- 4 Cups Ripe Mango Chunks - Approximately 660 g
- 3 Cups Plain Natural Yoghurt - Approximately 720 g
- 1½ Cups Cold Milk - Approximately 360 ml
- 3 Tablespoons Sugar Or Honey - Approximately 38–45 g
- ¾ Teaspoon Ground Cardamom
- 12 Ice Cubes
- 1 Tablespoon Chopped Pistachios - Optional
- A Few Saffron Strands - Optional
Step 1: Prepare The Mangoes
- Wash the mangoes thoroughly under clean running water.
- Peel off the skin, cut the flesh away from the stones and chop it into small chunks.
- Measure approximately four cups of mango flesh.
- Remove any tough, fibrous pieces to help produce a smoother drink.
Choose mangoes that smell sweet and yield slightly when gently pressed. If fresh mangoes are unavailable, frozen mango chunks or good-quality unsweetened mango pulp are suitable alternatives.
Step 2: Add The Main Ingredients
- Place the mango chunks into the blender.
- Add the chilled natural yoghurt and approximately one cup of cold milk.
- Add two tablespoons of sugar or honey to begin with.
- Sprinkle in the ground cardamom.
- Add the ice cubes if you want to serve the drink immediately.
Starting with less milk gives you better control over the final consistency. You can add the remaining milk after blending.
Step 3: Blend Until Smooth
- Secure the blender lid firmly.
- Blend on a medium setting for approximately 30 seconds.
- Increase to high speed and continue blending for another 30–60 seconds, or until the mango and yoghurt form a smooth mixture.
- Stop the blender and check the texture.
- If any mango pieces remain, scrape down the sides with the appliance switched off and blend again briefly.
The finished Traditional Mango Lassi should be creamy and pourable, without large fruit pieces. Avoid prolonged blending once the mixture is smooth.
Step 4: Taste And Adjust The Flavour
- Taste a small spoonful of the mixture.
- Add the remaining sugar or honey if the mangoes are not sweet enough.
- Pour in the remaining half-cup of milk gradually if the drink is too thick.
- Add a small pinch of cardamom if you prefer a stronger aroma.
- Blend for another 10–15 seconds to combine any adjustments.
Yoghurt naturally contributes a tangy flavour. The aim is to balance that tanginess with the sweetness of the mango without overwhelming the fruit.
Step 5: Pour, Garnish And Serve
- Pour the Traditional Mango Lassi evenly into six clean serving glasses.
- Sprinkle a little ground cardamom over each serving.
- Add chopped pistachios or saffron strands if desired.
- Serve immediately while cold and creamy.
-
🥭 Choose Ripe Mangoes: Use sweet, juicy mangoes for the best flavour, natural sweetness, and vibrant golden colour.
-
🥛 Use Chilled Yoghurt: Cold, plain natural yoghurt creates a creamy texture and balances the sweetness of the mangoes.
-
🍯 Adjust the Sweetness: Start with a small amount of sugar or honey and add more only after tasting.
-
🌿 Add Cardamom Carefully: A little ground cardamom gives the lassi its distinctive aromatic flavour.
-
🌀 Blend Until Smooth: Blend thoroughly until all the ingredients are combined and the drink is creamy.
-
🧊 Control the Consistency: Add milk gradually for a thinner drink, or use extra mango or yoghurt for a thicker texture.
-
🍸 Garnish Before Serving: Sprinkle chopped pistachios, saffron strands, or a pinch of cardamom on top, if desired.
-
❄️ Serve Chilled: Enjoy immediately for the freshest flavour, or refrigerate in a covered container and consume within 24 hours for the best quality.
-
🌱 Make It Dairy-Free: Substitute dairy yoghurt and milk with suitable unsweetened plant-based alternatives.
-
⚠️ Check For Allergies: Omit pistachios if serving anyone with a nut allergy, and choose ingredients suitable for your dietary needs.
