Ingredients
  

  • 30 long pieces Chicken Suya
  • 2 tablespoons Suya spice
  • 6 medium Red onions
  • Small cabbage
  • 3 medium Cucumbers
  • 6 Plum tomatoes
  • ½ teaspoon Fine salt
  • 1 tablespoon Extra suya spice

Instructions
 

Step 1: Prepare The Vegetables

  • Wash the cabbage, cucumber, tomatoes, and red onions thoroughly.
  • Pat the vegetables dry with kitchen paper.
  • Slice the cucumber lengthways into thin strips.
  • Slice the tomatoes and red onions thinly.
  • Finely shred the cabbage.
  • Keep each vegetable separate for easy arrangement.

Step 2: Prepare The Chicken Suya

  • Place the cooked chicken suya on a clean chopping board.
  • Cut the chicken into thin strips, approximately 1.5 cm wide.
  • Sprinkle with additional suya spice if a stronger flavour is desired.
  • Gently warm the chicken if it has cooled, taking care not to overcook it.

Step 3: Chill The Vegetables

  • Place the prepared cucumber, cabbage, tomatoes, and onions in the refrigerator.
  • Chill for approximately 20–30 minutes.
  • Keep the vegetables cool while preparing the chicken for a refreshing hot-and-cold contrast.

Step 4: Arrange The Salad

  • Place a large serving platter on a flat surface.
  • Arrange the vegetables around the outside edge in sections or petal-like shapes.
  • Alternate the colours and textures for an attractive presentation.
  • Position the warm chicken suya strips over and between the vegetables.
  • Curve some of the longer chicken pieces around the vegetables.
  • Finish with a light sprinkling of suya spice.

Step 5: Serve

  • Serve the salad immediately for warm chicken and cool vegetables.
  • Alternatively, refrigerate briefly if you prefer the entire salad chilled.
  • Serve alongside jollof rice, fried rice, coconut rice, or another Nigerian rice dish.
