This vibrant Southwest Salad combines crisp romaine, sweetcorn, black beans, juicy tomatoes, colourful peppers, cheddar cheese, and crunchy tortilla strips, all tossed in a creamy avocado-cilantro dressing. Fresh, filling, and packed with Tex-Mex flavour, it makes a delicious lunch or colourful side dish, ready in just 30 minutes.

Ingredients
  

For The Salad

  • cups chopped romaine lettuce
  • vine tomatoes - chopped
  • ¾ red bell pepper - diced
  • ¾ green bell pepper - diced
  • ¾ cup sweetcorn - thawed and dried
  • ¾ cup tinned black beans - drained and rinsed
  • ¾ cup shredded cheddar cheese
  • 3 tablespoons chopped fresh coriander
  • 3 tablespoons thinly sliced spring onions
  • ¾ cup crispy tortilla strips

For The Creamy Avocado Dressing

  • ¾ ripe avocado - cubed
  • garlic cloves - minced
  • teaspoon kosher salt
  • teaspoon coarsely ground black pepper
  • teaspoon ground cumin
  • ¼ cup olive oil
  • 3 tablespoons fresh lime juice
  • tablespoons chopped fresh coriander

Instructions
 

Step 1: Prepare The Creamy Avocado Dressing

  • Add the avocado, garlic, salt, black pepper, cumin, olive oil, lime juice, and chopped coriander to a food processor.
  • Blend until smooth and creamy.
  • Scrape down the sides if necessary and blend again until no large pieces remain.
  • Taste and adjust the seasoning if needed.

Step 2: Prepare The Lettuce

  • Wash the romaine lettuce thoroughly under cold running water.
  • Dry well using a salad spinner or clean kitchen towel.
  • Chop the lettuce into bite-sized pieces and transfer it to the large mixing bowl.

Step 3: Prepare The Vegetables

  • Chop the tomatoes into bite-sized pieces.
  • Dice the red and green bell peppers evenly.
  • Thinly slice the spring onions.
  • Roughly chop the fresh coriander.
  • Add the prepared vegetables and coriander to the bowl with the romaine.

Step 4: Add The Corn And Beans

  • Make sure the sweetcorn is completely thawed if using frozen corn.
  • Pat the corn dry to remove excess moisture.
  • Drain and rinse the black beans thoroughly.
  • Add the corn and black beans to the salad bowl.
  • Gently fold the ingredients together.

Step 5: Add The Cheese

  • Sprinkle the shredded cheddar over the vegetables.
  • Gently fold it through the salad until evenly distributed.

Step 6: Dress The Salad

  • Pour the creamy avocado dressing over the prepared salad.
  • Use salad servers to gently toss and fold everything together.
  • Continue until the ingredients are lightly coated.
  • Avoid over-mixing to keep the lettuce and tomatoes fresh.

Step 7: Add The Crunch

  • Sprinkle the crispy tortilla strips over the salad just before serving.
  • Fold them through lightly or leave them on top for presentation.
  • Serve immediately for the best texture.
