- 3 medium carrots
- 1Β½ heads cabbage
- 3 medium red onions
- 6 cups rocket - arugula
- 3 fresh limes
- 6 tablespoons olive oil
- Salt - to taste
- Freshly ground black pepper - to taste

Peel and grate the carrots.
Finely shred the cabbage.
Thinly slice the red onions.
