  • 3 Cups Water
  • 1 Teaspoon Fine Sea Salt
  • 1 Large Cucumber - Diced
  • 2 Cups Cherry Tomatoes - Halved
  • 1 Red Bell Pepper - Diced
  • Β½ Small Red Onion - Finely Chopped
  • 2 Cups Baby Spinach - Chopped
  • Β½ Cup Fresh Parsley - Chopped
  • ΒΌ Cup Fresh Mint - Chopped
  • Β½ Cup Crumbled Feta Cheese
  • ΒΌ Cup Olive Oil – Extra Virgin
  • 3 Tablespoons Fresh Lemon Juice
  • 1 Teaspoon Dijon Mustard
  • 1 Teaspoon Honey
  • 2 Garlic Cloves - Minced
  • Freshly Ground Black Pepper To Taste
  • ΒΌ Cup Toasted Pumpkin Seeds or Pine Nuts

Instructions
 

Step 1: Rinse The Quinoa

  • Place the quinoa into a fine-mesh sieve.
  • Rinse thoroughly under cold running water for about one minute.
