This vibrant Quinoa Power Bowl is a delicious, wholesome meal packed with fluffy quinoa, roasted sweet potatoes, crispy chickpeas, cauliflower, kale and creamy avocado. For The Quinoa
- 1½ cups quinoa
- 3 cups water
- ½ teaspoon salt
For The Roasted Vegetables And Chickpeas
- 1½ pounds sweet potatoes
- 1½ medium heads cauliflower
- 1½× 400 g cans chickpeas - drained and rinsed
- 6 tablespoons olive oil - extra-virgin
- 1½ tablespoons nutritional yeast
- 1½ teaspoons ground cumin
- ¾ teaspoon paprika
- ¾ teaspoon garlic powder
- ¾ teaspoon onion powder
- ¾ teaspoon salt
- ¾ teaspoon black pepper
For The Massaged Kale
- 1½ large bunches kale
- 3 tablespoons olive oil - extra-virgin
- 3 tablespoons fresh lemon juice
- ⅜ teaspoon salt
- Black pepper - to taste
For The Tahini Dressing
- 6 tablespoons tahini
- 4½ tablespoons fresh lemon juice
- 4–5 garlic cloves
- 1½ tablespoons maple syrup
- 2–3 tablespoons water
- Salt and black pepper - to taste
🌾 Step 1: Rinse And Cook The Quinoa
Place the quinoa in a fine-mesh sieve and rinse thoroughly under cold running water.
Transfer it to a medium saucepan with the water and salt.
Bring to a boil over medium-high heat.
Reduce the heat to low, cover, and simmer for approximately 15 minutes.
Remove from the heat and leave covered for 5–10 minutes.
Fluff gently with a fork and set aside.
🔥 Step 2: Season The Sweet Potatoes
Preheat the oven to 230°C / 210°C fan.
Place the cubed sweet potatoes in a large mixing bowl.
Add the olive oil, nutritional yeast, cumin, paprika, garlic powder, onion powder, salt, and black pepper.
Toss until evenly coated.
Spread the sweet potatoes in a single layer on a large baking tray.
🍠 Step 3: Roast The Sweet Potatoes
Roast the sweet potatoes for approximately 10 minutes.
Meanwhile, drain and rinse the chickpeas thoroughly.
Pat the chickpeas dry and cut the cauliflower into evenly sized florets.
🫘 Step 4: Add The Cauliflower And Chickpeas
Remove the tray from the oven.
Add the cauliflower and chickpeas.
Drizzle over the remaining olive oil and toss carefully.
Return the tray to the oven.
Roast for another 20–25 minutes, or until the sweet potatoes are tender, the cauliflower is lightly browned, and the chickpeas are crisp.
Season with additional salt or black pepper if needed.
🥬 Step 5: Massage The Kale
Remove the tough stems from the kale.
Wash and dry the leaves thoroughly.
Tear the kale into bite-sized pieces and place them in a large mixing bowl.
Add the olive oil, lemon juice, and salt.
Massage the leaves with clean hands for 1–2 minutes, until they become softer and darker.
Season with black pepper to taste.
🥄 Step 6: Make The Tahini Dressing
Add the tahini, lemon juice, minced garlic, and maple syrup to a small mixing bowl.
Whisk until combined.
Gradually add the water while whisking until the dressing reaches a smooth, pourable consistency.
Season with salt and black pepper.
Add a little more water if the dressing is too thick.
🥗 Step 7: Assemble The Quinoa Power Bowl
Divide the cooked quinoa between serving bowls.
Arrange the roasted sweet potatoes, cauliflower, and chickpeas over the quinoa.
Add the massaged kale.
Drizzle generously with the tahini dressing.
Serve immediately while the roasted vegetables are warm and the quinoa is fluffy.
