- 2 lb 900 g Yukon Gold potatoes
- ¾ cup 180 g mayonnaise
- 2 tablespoons dill pickle brine
- 1 tablespoon apple cider vinegar
- 1 tablespoon yellow mustard
- 2 garlic cloves grated
- 1 teaspoon sea salt
- Freshly ground black pepper to taste
- 2 celery stalks diced
- ½ cup diced dill pickles
- ½ cup chopped fresh chives
- 2 tablespoons chopped fresh dill
- 2 hard-boiled eggs peeled and chopped
Step 1: Prepare The Potatoes
Wash the potatoes thoroughly and cut them into roughly ½-inch (1–1.5 cm) pieces.
Place them in a large saucepan and cover with cold water by about 2.5 cm.
Bring to a boil over high heat.
Reduce the heat and simmer for about 10 minutes, until the potatoes are fork-tender.
Drain thoroughly and allow them to cool to room temperature.
Step 2: Make The Creamy Dressing
Add the mayonnaise, dill pickle brine, apple cider vinegar and yellow mustard to a medium mixing bowl.
Add the grated garlic and sea salt.
Season with freshly ground black pepper.
Whisk until smooth and creamy.
Taste and adjust the seasoning if necessary.
Step 3: Dress The Potatoes
Transfer the cooled potatoes to a large mixing bowl.
Pour the dressing over the potatoes.
Gently stir until evenly coated.
