1 Large Mixing Bowl
1 Small Mixing Bowl
1 Small Whisk:
1 Sharp Chef’s Knife
1 Large Cutting Board
1 Serving Bowl -
- 3 cups fresh pineapple pieces
- 1½ cups cucumber - peeled and chopped
- 1½ cups carrot - peeled and chopped
- 1½ teaspoons fresh lemon juice
- 1⅛ teaspoons olive oil
- 1½ tablespoons honey
- 1½ tablespoons fresh mint leaves - chopped
- ¼ teaspoon salt - to taste
- ¼ teaspoon freshly crushed black pepper - to taste
Step 1: Prepare the Pineapple
Peel the pineapple thoroughly, removing the tough outer skin and any remaining eyes.
Cut away the core, then slice the flesh into small, even bite-sized pieces.
Measure 3 cups of pineapple and place it in a large mixing bowl.
If using pre-cut pineapple, drain away any excess liquid before adding it to the bowl.
Step 2: Prepare the Vegetables
Peel the cucumber if preferred, then chop it into bite-sized pieces.
Peel the carrot and cut it into small pieces or thin slices.
Add both vegetables to the pineapple.
Keep the pieces reasonably uniform so every serving has a balanced mixture of fruit and vegetables.
Step 3: Prepare the Mint
Rinse the fresh mint leaves under cool running water.
Pat them dry gently with a clean kitchen towel.
Remove any tough stems.
Chop the leaves finely enough to distribute their flavour throughout the salad.
Step 4: Make the Dressing
Add the fresh lemon juice to a small bowl.
Pour in the olive oil and honey.
Add the chopped mint, salt and freshly crushed black pepper.
Whisk everything together until the honey is incorporated and the dressing looks evenly blended.
Taste the dressing and adjust the seasoning if necessary.
Step 5: Combine Everything
Pour the dressing over the pineapple, cucumber and carrot.
Use two large spoons to gently toss the ingredients.
Fold rather than aggressively stir to keep the fruit and vegetables intact.
Continue tossing until the dressing lightly coats all the ingredients.
Step 6: Chill the Salad
Cover the bowl with a suitable lid or food-safe covering.
Refrigerate the Pineapple Mint Salad for approximately 20–30 minutes before serving.
Chilling allows the flavours to mingle while keeping the salad crisp and refreshing.
Step 7: Serve
Give the salad a gentle toss immediately before serving.
Transfer it to a clean serving bowl.
Garnish with a few whole mint leaves if desired.
Serve chilled and enjoy immediately for the best texture.
