Ingredients
  

  • 2 Cups Pearl Couscous
  • 4 Cups Vegetable Stock or Water
  • 1 Teaspoon Salt
  • 3 Tablespoons Olive Oil – Extra Virgin
  • 3 Tablespoons Fresh Lemon Juice
  • 1 Teaspoon Lemon Zest
  • 2 Cups Cherry Tomatoes - Halved
  • 1 Large Cucumber - Diced
  • 1 Large Red Bell Pepper - Diced
  • ½ Medium Red Onion - Finely Chopped
  • ½ Cup Fresh Parsley - Chopped
  • ¼ Cup Fresh Mint = Chopped
  • 150 g Feta Cheese - Crumbled
  • ½ Cup Black Olives - Sliced
  • 1 Garlic Clove - Minced
  • 1 Teaspoon Honey
  • ½ Teaspoon Freshly Ground Black Pepper

Instructions
 

Step 1: Cook The Pearl Couscous

  • Bring the vegetable stock or water to a gentle boil in a medium saucepan.
  • Stir in the salt.
  • Add the pearl couscous.
  • Reduce the heat to a gentle simmer.
  • Cook for 8–10 minutes, stirring occasionally.
  • The couscous should become tender while maintaining a slight chew.
  • Drain any excess liquid if necessary.
  • Spread the cooked couscous onto a tray or large plate to cool completely.

Step 2: Prepare The Fresh Vegetables

  • Wash all vegetables thoroughly.
  • Slice the cherry tomatoes in half.
  • Dice the cucumber into bite-sized cubes.
  • Finely chop the red onion.
  • Dice the red pepper evenly.
  • Slice the olives.
  • Chop the parsley and mint just before mixing to preserve their freshness and vibrant colour.

Step 3: Make The Lemon Dressing

    In a small bowl, combine:

    • Extra virgin olive oil
    • Fresh lemon juice
    • Lemon zest
    • Minced garlic
    • Honey
    • Salt
    • Black pepper
    • Whisk continuously until the dressing becomes smooth, glossy and fully emulsified.

    Step 4: Assemble The Pearl Couscous Salad

      Once the couscous has cooled:

      • Transfer it to a large mixing bowl.
      • Add the cucumber.
      • Add the tomatoes.
      • Add the diced peppers.
      • Add the onions.
      • Add the olives.
      • Sprinkle over the chopped parsley.
      • Fold in the chopped mint.
      • Add the crumbled feta cheese.
      • Pour the prepared dressing evenly over the salad.

      Notes

      • 🥗 Cook the pearl couscous until just tender (al dente) to maintain its pleasantly chewy texture. Avoid overcooking, as it can become soft and sticky.
      • ❄️ Allow the cooked couscous to cool completely before mixing with the vegetables to keep the salad fresh and crisp.
