Ingredients

  • 1.2 kg Cooked Octopus
  • 300 g Cherry Tomatoes
  • 1 Large Cucumber
  • 1 Red Bell Pepper
  • 1 Medium Red Onion – Thinly sliced for mild sharpness.
  • 120 g Black Olives.
  • ½ Cup Fresh Parsley – Finely chopped for freshness.
  • 2 Large Lemons
  • 6 Tablespoons Olive Oil – Extra Virgin
  • 3 Garlic Cloves – Finely minced for depth.
  • 1½ Teaspoons Sea Salt
  • 1 Teaspoon Freshly Ground Black Pepper
  • ½ Teaspoon Chilli Flakes Optional

Instructions

Step 1: Prepare The Octopus

  • If using pre-cooked octopus, rinse it briefly under cold running water and pat it dry with kitchen paper.
  • Slice the octopus into bite-sized pieces, trimming away any tough sections if necessary.
  • Place the sliced octopus into a large mixing bowl and set it aside while you prepare the remaining ingredients.

Step 2: Prepare The Fresh Vegetables

  • Halve the cherry tomatoes for a burst of sweetness in every bite.
  • Dice the cucumber into small, even pieces to add a refreshing crunch.
  • Finely chop the red bell pepper for colour and natural sweetness.
  • Thinly slice the red onion to give the salad a mild, sharp flavour.
  • Finely chop the fresh parsley to enhance the salad with a bright, herbaceous finish.

Step 3: Make The Lemon Dressing

  • In a small bowl, whisk together the extra virgin olive oil and freshly squeezed lemon juice until well combined.
  • Add the minced garlic and mix thoroughly.
  • Season with sea salt and freshly ground black pepper to taste.
  • Stir in the chilli flakes if you prefer a touch of heat.

Step 4: Assemble The Salad

  • Add the chopped tomatoes, cucumber, bell pepper, red onion, olives and parsley to the bowl with the octopus.
  • Pour the freshly prepared dressing evenly over the ingredients.
  • Gently fold everything together until the octopus and vegetables are evenly coated with the dressing.

Step 5: Chill The Salad

  • Cover the bowl with cling film or transfer the salad to an airtight container.
  • Refrigerate for 30 minutes to allow the flavours to blend and develop.
  • Taste the salad after chilling and adjust the seasoning with a little extra lemon juice, salt or pepper if needed.

Step 6: Garnish And Serve

  • Sprinkle with additional chopped fresh parsley for a vibrant finish.
  • Garnish with fresh lemon wedges for extra citrus flavour.
  • Add a light drizzle of extra virgin olive oil just before serving if desired.
  • Serve your Octopus Salad chilled as a delicious appetiser, light lunch or elegant main course alongside crusty bread or your favourite Mediterranean side dishes.

Notes

  • 🐙 For the best Octopus Salad, use properly cooked octopus that is tender rather than rubbery. If cooking from raw, simmer gently until fork-tender before slicing.
  • 🍋 Always use freshly squeezed lemon juice for the brightest, freshest flavour.
  • 🌿 Fresh parsley and high-quality extra virgin olive oil make a noticeable difference to the taste.
  • ❄️ Chill the salad for at least 30 minutes before serving to allow the flavours to blend beautifully.
  • 🧂 Taste and adjust the seasoning just before serving, as the octopus and olives can vary in saltiness.
  • 🥗 Serve well chilled, but avoid serving straight from the refrigerator; letting it stand at room temperature for 10–15 minutes enhances its flavour.
  • 🫒 Feel free to customise the salad with ingredients such as capers, celery, cherry tomatoes or avocado for extra texture and flavour.
  • 📦 Store leftovers in an airtight container in the refrigerator for up to 2 days. Freezing is not recommended, as it can affect the texture of both the octopus and the fresh vegetables.
