- 2 × 400g cans black beans - drained and rinsed
- 1½ cups sweetcorn kernels
- 2 cups cherry tomatoes - halved
- 1 large red bell pepper - diced
- 1 large yellow bell pepper - diced
- 1 small red onion - finely diced
- ½ cup fresh coriander - chopped
- 2 ripe avocados - diced
- 1 fresh jalapeño - finely chopped
- Juice of 2 fresh limes
- 4 tablespoons olive oil - extra virgin
- 2 garlic cloves - minced
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
Step 1: Prepare the Beans
Drain the canned black beans thoroughly.
Rinse them under cold running water.
Allow the beans to drain completely to prevent excess moisture from diluting the dressing.
Step 2: Prepare the Vegetables
Halve the cherry tomatoes.
Dice both bell peppers into evenly sized cubes.
Finely chop the red onion.
Mince the garlic.
