Ingredients
  

  • 2 × 400g cans black beans - drained and rinsed
  • cups sweetcorn kernels
  • 2 cups cherry tomatoes - halved
  • 1 large red bell pepper - diced
  • 1 large yellow bell pepper - diced
  • 1 small red onion - finely diced
  • ½ cup fresh coriander - chopped
  • 2 ripe avocados - diced
  • 1 fresh jalapeño - finely chopped
  • Juice of 2 fresh limes
  • 4 tablespoons olive oil - extra virgin
  • 2 garlic cloves - minced
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

Instructions
 

Step 1: Prepare the Beans

  • Drain the canned black beans thoroughly.
  • Rinse them under cold running water.
  • Allow the beans to drain completely to prevent excess moisture from diluting the dressing.

Step 2: Prepare the Vegetables

  • Halve the cherry tomatoes.
  • Dice both bell peppers into evenly sized cubes.
  • Finely chop the red onion.
  • Mince the garlic.
  • Finely chop the jalapeño.
  • Roughly chop the fresh coriander.
  • Dice the avocado just before mixing to keep it fresh.

Step 3: Prepare the Dressing

    In a small bowl or jar, combine:

    • Extra virgin olive oil
    • Fresh lime juice
    • Honey
    • Minced garlic
    • Ground cumin
    • Smoked paprika
    • Sea salt
    • Black pepper
    • Whisk vigorously until smooth and fully combined.
    • Taste and adjust the seasoning if necessary. Add extra lime juice for a brighter flavour or a little more honey for a sweeter finish.

    Step 4: Assemble the Salad

    • Add the black beans to a large mixing bowl.
    • Fold in the sweetcorn.
    • Add the cherry tomatoes.
    • Mix in the diced bell peppers.
    • Add the chopped red onion.
    • Sprinkle over the fresh coriander.
    • Carefully fold in the diced avocado.

    Step 5: Dress the Salad

    • Slowly pour the prepared dressing evenly over the salad.
    • Using a large salad spoon, gently fold all the ingredients together until every bean and vegetable is lightly coated.
    • Avoid over-mixing to prevent the avocado from breaking apart.
    • Taste the Mexican Bean Salad and adjust the seasoning with extra salt, black pepper or fresh lime juice if required.

    Step 6: Chill Before Serving

    • Cover the bowl with cling film or a reusable lid.
    • Refrigerate the Mexican Bean Salad for 30–60 minutes.
    • Chilling allows the dressing to soak into the beans and vegetables, making the flavours richer and more balanced.
    • Just before serving, gently stir the salad and garnish with extra coriander and avocado if desired.
