For The Salad
- 1 orange bell pepper - chopped
- 1 red bell pepper - chopped
- 1 English cucumber - chopped
- 2×400 g cans chickpeas - drained and rinsed
- 3 cups grape tomatoes - halved
- 2 cups cooked quinoa - cooled
- ½ cup feta cheese - crumbled
For The Dressing
- ¼ cup olive oil - extra virgin
- ½ cup red wine vinegar
- 2 tablespoons honey
- 1 tablespoon Greek-style seasoning
- 1 teaspoon salt
- ¼ teaspoon black pepper
Step 1: Prepare The Quinoa
If your quinoa is not already cooked, rinse it thoroughly under cold water.
Cook the quinoa according to the packet instructions until the grains are tender and the characteristic little tails appear.
Spread the cooked quinoa into a shallow dish and allow it to cool completely before assembling the salad.
Avoid mixing hot quinoa into the vegetables because the heat can soften the cucumber and tomatoes.
