Ingredients
  

  • 2 400g tins chickpeas, - drained and rinsed
  • 2 cups cherry tomatoes - halved
  • 1 large cucumber - diced
  • ½ medium red onion - finely sliced
  • 1 red bell pepper - diced
  • ¾ cup Kalamata olives - halved
  • 150 g feta cheese - crumbled
  • ¼ cup fresh parsley - chopped
  • 2 tablespoons fresh mint - finely chopped
  • 1 large lemon - juiced
  • 4 tablespoons olive oil - extra virgin
  • 2 garlic cloves - minced
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

Instructions
 

Step 1: Prepare the Chickpeas

  • Drain the chickpeas thoroughly.
  • Rinse them under cold running water.
  • Allow them to drain well.
  • Pat them dry gently using kitchen paper for the best texture.

Step 2: Prepare the Vegetables

  • Dice the cucumber into bite-sized pieces.
  • Slice the cherry tomatoes in half.
  • Finely slice the red onion.
  • Dice the bell pepper evenly.
  • Halve the Kalamata olives.
  • Finely chop the parsley and mint.

Step 3: Make the Dressing

  • Add the extra virgin olive oil to a small bowl.
  • Whisk in the fresh lemon juice.
  • Add the minced garlic.
  • Sprinkle in the dried oregano.
  • Season with sea salt and freshly ground black pepper.
  • Continue whisking until the dressing is smooth and slightly emulsified.

Step 4: Assemble the Salad

  • Place the chickpeas into a large serving bowl.
  • Add the cucumber, tomatoes, red onion, bell pepper and olives.
  • Sprinkle over the chopped parsley and mint.
  • Gently fold everything together.

Step 5: Add the Feta

  • Scatter the crumbled feta evenly over the salad.
  • Fold carefully to avoid breaking the feta into very small pieces.

Step 6: Dress the Salad

  • Pour the dressing evenly over the salad.
  • Toss gently until every ingredient is lightly coated.
  • Taste and adjust the seasoning if necessary.

Step 7: Chill Before Serving

  • Cover the bowl and refrigerate for 20–30 minutes.
