Instructions
 

Step 1: Cook The Pearl Barley

  • Rinse the pearl barley thoroughly under cold running water.
  • Bring a large saucepan of lightly salted water to the boil.
  • Add the barley and cook for 25–30 minutes, or until tender with a pleasant chewy texture.
  • Drain well using a fine sieve.
  • Rinse briefly under cold water to stop the cooking process.
  • Allow the barley to cool completely before assembling your Mediterranean Barley Salad.

Step 2: Prepare The Fresh Vegetables

  • Halve the cherry tomatoes.
  • Dice the cucumber into bite-sized pieces.
