Mango Tomato Salad is a vibrant, refreshing combination of juicy ripe mangoes, fresh tomatoes, red onion, herbs and chilli tossed in a zesty lime dressing. Quick and easy to prepare, this colourful salad is perfect as a healthy side dish, light lunch, or refreshing addition to grilled meals.

- 3 Large Ripe Mangoes
- 5 Medium Ripe Tomatoes
- 1 Small Red Onion
- Β½ Cup Fresh Coriander
- ΒΌ Cup Fresh Mint
- 1 Small Red Chilli
- 3 Tablespoons Fresh Lime Juice
- 3 Tablespoons Olive Oil - Extra-Virgin
- 1 Teaspoon Honey
- Β½ Teaspoon Fine Sea Salt
- ΒΌ Teaspoon Black Pepper - Freshly Ground
- Β½ Teaspoon Smoked Paprika
- 3 Tablespoons Toasted Pumpkin Seeds - Optional
Step 1: Prepare The Mangoes
Wash and dry the mangoes thoroughly.
Place each mango upright and carefully slice down both sides of the stone.
Score the flesh into bite-sized cubes without cutting through the skin.
Scoop the mango pieces away from the skin using a spoon or carefully cut them away with your knife.
Transfer the cubes to a large mixing bowl.
Step 2: Prepare The Tomatoes
Wash the tomatoes and pat them dry.
Remove the cores.
Cut the tomatoes into medium-sized wedges or bite-sized chunks.
If the tomatoes contain excessive watery seeds, gently remove some of the seeds.
Add the tomatoes to the bowl with the mango.
Step 3: Add The Aromatics
Peel the red onion and slice it as thinly as possible.
Finely slice the red chilli.
Roughly chop the coriander and mint.
Add all three ingredients to the mango and tomato mixture.
Step 4: Make The Dressing
Add the lime juice, olive oil and honey to a small bowl.
Add the salt, black pepper and smoked paprika.
Whisk vigorously for about 30 seconds until well combined.
Taste and adjust the lime juice, honey or seasoning if needed.
Step 5: Combine Everything
Pour approximately two-thirds of the dressing over the mango and tomatoes.
Using salad servers, gently fold everything together.
Avoid vigorous stirring because the mangoes and tomatoes can bruise or break.
Taste and add the remaining dressing gradually.
Sprinkle over the toasted pumpkin seeds if using.
Step 6: Rest Briefly And Serve
Allow the salad to stand for approximately 5β10 minutes.
Garnish with extra coriander and mint leaves.
Add another light grind of black pepper if desired.
Serve immediately.
