- 700 g Cooked Sweet Potato
- 150 g Ripe Mango - Finely Diced
- 40 g Rolled Oats
- 30 g Desiccated Coconut
- 15 g Chia Seeds
- 1 Tablespoon Honey Or Maple Syrup
- 1 Tablespoon Fresh Lime Juice
- 1 Teaspoon Finely Grated Lime Zest

- ΒΌ Teaspoon Ground Cinnamon

Step 1: Cook The Sweet Potato
Preheat your oven to 200Β°C conventional or 180Β°C fan.
Peel the sweet potatoes and cut them into evenly sized chunks.
Roast or steam until completely tender.
If roasting, cook for approximately 25β35 minutes, depending on the size of the pieces.
Allow the cooked sweet potato to cool slightly before mashing.
Step 2: Prepare The Mango
Peel the mango and remove the stone.
Dice the flesh into very small pieces.
Keep the pieces small so they distribute evenly throughout the Mango Sweet Potato Bites.
Set aside a tablespoon or two of diced mango for optional decoration.
Step 3: Build The Sweet Potato Mixture
Place the warm mashed sweet potato in a large bowl.
Add the oats, desiccated coconut, chia seeds, lime zest, cinnamon, ginger and salt.
Pour in the lime juice and honey or maple syrup.
Stir thoroughly until everything is evenly combined.
Step 4: Fold In The Mango
Gently fold the diced mango into the sweet potato mixture.
Avoid aggressive stirring because very ripe mango can release too much liquid.
The finished mixture should be soft but firm enough to shape.
If it feels too wet, add another tablespoon of oats and leave it for 5 minutes so the chia seeds can absorb moisture.
Step 5: Shape The Bites
Line a baking tray with parchment.
Lightly grease the parchment with the neutral oil.
Scoop approximately two tablespoons of mixture for each bite.
Roll gently between your palms, then flatten slightly.
Arrange the pieces on the tray with a little space between them.
Step 6: Bake Until Golden
Place the tray in the preheated oven.
Bake the Mango Sweet Potato Bites for approximately 20β25 minutes.
Turn them carefully halfway through cooking for more even browning.
They should look lightly golden around the edges and feel firm enough to lift.
Do not overbake, as the centres should remain soft and moist.
Step 7: Cool And Serve
Remove the tray from the oven.
Leave the bites to cool for 10 minutes.
Transfer them to a serving plate.
Finish with a little fresh lime zest, finely diced mango or toasted coconut if desired.
