Mango Slaw Recipe
This colourful Mango Slaw combines juicy ripe mango, crisp cabbage, crunchy carrots, red onion, and fresh coriander with a bright lime dressing. Fresh, tangy, and lightly sweet, it makes a delicious side dish for BBQs, grilled meats, fish, wraps, or family meals.

- 6 Cups Finely Shredded Green Cabbage
- 2 Ripe Mangoes - Diced
- 1 Large Carrot - Julienned
- ½ Small Red Onion - Thinly Sliced
- ¼ Cup Fresh Coriander - Chopped
- 1 Small Red Chilli - Finely Sliced — Optional
- ¼ Cup Toasted Cashews — Optional
- 3 Tablespoons Fresh Lime Juice
- 2 Tablespoons Extra-Virgin Olive Oil
- 1 Tablespoon Honey
- 1 Teaspoon Dijon Mustard
- ½ Teaspoon Salt
- ¼ Teaspoon Black Pepper
Step 1: Prepare The Cabbage
Remove any damaged outer cabbage leaves.
Quarter the cabbage and remove the hard central core.
Slice the cabbage very thinly.
Place it in a large mixing bowl.
For extra crunch, soak the shredded cabbage in iced water for about 5 minutes, then drain and dry thoroughly.
Step 2: Prepare The Mango
Peel the mangoes and remove the flesh from the stones.
Dice the mango into small, even pieces.
Set aside while preparing the other ingredients.
Step 3: Prepare The Vegetables
Peel and julienne the carrot.
Thinly slice the red onion.
Chop the coriander.
Finely slice the chilli if using.
Add the cabbage, carrot, onion, coriander and chilli to the mixing bowl.
Step 4: Make The Zesty Dressing
Add the lime juice, olive oil, honey and Dijon mustard to a small jar or bowl.
Season with salt and black pepper.
Whisk or shake until smooth and well combined.
Adjust the lime or honey to taste.
Step 5: Combine The Slaw
Pour about three-quarters of the dressing over the vegetables.
Gently toss using salad tongs or two large spoons.
Add the diced mango.
Carefully fold the mango through the slaw.
Add the remaining dressing if needed.
Step 6: Rest Before Serving
Allow the Mango Slaw to rest for approximately 10–15 minutes.
Gently toss once more before serving.
Serve immediately for the best texture.
