  • 60 ml Fresh Lime Juice
  • 2 Tablespoons Extra-Virgin Olive Oil
  • 1 Tablespoon Honey
  • 1 Tablespoon Low-Sodium Soy Sauce
  • ½ Teaspoon Chilli Sauce
  • Pinch Of Black Pepper

Instructions

Step 1: Prepare The Fresh Ingredients

  • - Wash the salad leaves, cucumber, pepper, coriander and lime.
  • - Pat the salad leaves dry thoroughly to prevent the finished salad from becoming watery.
  • - Peel and dice the mango into bite-sized pieces.
  • - Dice the avocado just before assembling to reduce browning.
  • - Slice the cucumber, red pepper and red onion.
  • - Keep the prepared vegetables and fruit separate until needed.

Step 2: Season The Shrimp

  • - Pat the peeled and deveined shrimp dry with kitchen paper.
  • - Place the shrimp in a bowl.
  • - Add the minced garlic, smoked paprika, chilli flakes and salt.
  • - Toss thoroughly until every piece is coated with the seasoning.
  • - Allow the shrimp to stand for approximately 5 minutes while preparing the pan.

Step 3: Cook The Shrimp

  • - Heat 1 tablespoon of olive oil in a large frying pan over medium-high heat.
  • - Add the seasoned shrimp in a single layer.
  • - Cook for approximately 2 minutes on the first side.
  • - Turn the shrimp and cook for another 1–2 minutes.
  • - Remove them once they are opaque and cooked through.
  • - Avoid overcrowding the pan, as excess moisture can prevent proper browning.
  • - Allow the shrimp to cool slightly before adding them to the salad.

Step 4: Whisk The Zesty Dressing

  • - Add the fresh lime juice, extra-virgin olive oil, honey and low-sodium soy sauce to a small mixing bowl.
  • - Add the chilli sauce, if using.
  • - Season with a pinch of black pepper.
  • - Whisk vigorously until the dressing becomes glossy and well combined.
  • - Taste and adjust the balance, adding more lime juice for sharpness or honey for sweetness.

Step 5: Build The Salad

  • - Add the mixed salad leaves to a large serving bowl.
  • - Arrange the cucumber, red pepper and red onion over the leaves.
  • - Scatter the diced mango and avocado across the top.
  • - Add the chopped coriander.
  • - Arrange the cooked shrimp over the salad.
  • - Drizzle with approximately two-thirds of the dressing.

Step 6: Toss And Serve

  • - Use salad tongs to gently fold the ingredients together.
  • - Toss from underneath rather than stirring aggressively from the top.
  • - Add the remaining dressing gradually.
  • - Taste and adjust the seasoning if necessary.
  • - Garnish with extra coriander, lime wedges or a few chilli flakes.
  • - Serve the Mango Shrimp Salad immediately for the best combination of flavours and textures.

Notes

  • 🍤 Use Fresh Shrimp: Choose fresh, firm shrimp and pat them dry before seasoning for the best flavour and texture.
  • 🥭 Choose Ripe Mangoes: Use sweet but firm mangoes so the pieces hold their shape when tossed.
  • 🍋 Fresh Lime Matters: Freshly squeezed lime juice gives the dressing a brighter, more vibrant flavour.
  • 🔥 Avoid Overcooking: Cook the shrimp just until opaque and cooked through to keep them juicy and tender.
  • 🥑 Add Avocado Last: Dice the avocado shortly before serving to keep it fresh and prevent browning.
  • 🥗 Dress Before Serving: Add the lime dressing just before serving to keep the salad leaves and vegetables crisp.
  • 🌶️ Adjust the Heat: Increase or reduce the chilli flakes and chilli sauce according to your preference.
  • 🧊 For Make-Ahead Preparation: Store the shrimp, salad ingredients, and dressing separately, then combine just before serving.
  • 🍽️ Best Served Fresh: Enjoy the Mango Shrimp Salad immediately after assembling for the best texture, colour and flavour.
