Equipment

  • 1 High-speed blender
  • 1 Sharp Kitchen Knife
  • 1 Chopping Board
  • Measuring Cups and Spoons –
  • 1 Citrus Juicer –
  • 1 Small Mixing Bowl
  • 1 Long-Handled Spoon
  • 6 Serving Glasses
  • 1 Ice Cube Tray or Ice Bucket
  • 1 Clean Kitchen Towel

Ingredients

  • 3 cups approximately 495g ripe mango chunks — Use peeled, pitted mango flesh. Choose mangoes that are slightly soft when pressed and have a fragrant aroma.
  • ½ cup 120ml fresh lime juice — Freshly squeezed lime juice balances the mango’s natural sweetness.
  • 1 small fresh red chilli approximately 5–10g — Remove the seeds and membranes for a milder drink, or retain some for extra heat.
  • 1 tablespoon fresh grated ginger — Adds warmth and complements the chilli.
  • 2 tablespoons honey or simple syrup — optional — Use if your mangoes need additional sweetness. Agave syrup or another sugar syrup can also be used.
  • ½ cup 120ml chilled water — Helps the mango mixture blend smoothly.
  • 3 cups 720ml chilled sparkling water — Add just before serving for a refreshing fizz. Soda water is also suitable.
  • 2–3 cups ice cubes — Keeps the drink cold.
  • 2 tablespoons chilli-lime seasoning — Optional - for coating the glass rims.
  • 1 extra lime — cut into wedges — Use for preparing the glass rims and garnishing.
  • 6 fresh mint sprigs — Adds a refreshing aroma and a colourful garnish.

Instructions

Step 1: Prepare The Fresh Mangoes

  • - Wash the mangoes thoroughly under clean running water.
  • - Peel the mangoes using a vegetable peeler or sharp knife.
  • - Slice the flesh away from the central stones.
  • - Chop the mango flesh into small chunks.
  • - Measure approximately three cups of mango chunks and place them in a clean bowl.

Step 2: Squeeze The Fresh Lime Juice

  • - Wash the lime thoroughly.
  • - Roll each lime firmly against your chopping board to help release its juice.
  • - Cut the lime in half.
  • - Squeeze out approximately 120ml of fresh lime juice using a citrus juicer.
  • - Remove any seeds that fall into the juice.

Step 3: Prepare The Chilli And Ginger

  • - Wash the fresh chilli thoroughly.
  • - Slice it lengthways.
  • - Remove the seeds and white membranes if you prefer a milder drink.
  • - Finely chop the chilli.
  • - Peel the fresh ginger and grate it using a fine grater.

Step 4: Blend The Mango Mixture

  • - Add the prepared mango chunks to your blender.
  • - Pour in the fresh lime juice.
  • - Add the grated ginger and chopped chilli.
  • - Pour in the chilled water.
  • - Add the optional honey or simple syrup.
  • - Blend on high speed for approximately 45–60 seconds, or until completely smooth.

Step 5: Taste And Adjust The Flavour

  • - Taste a small spoonful of the mango mixture.
  • - Add more lime juice if it tastes excessively sweet.
  • - Add a little honey or simple syrup if it tastes too tart.
  • - Add extra chilli if you prefer a stronger kick.
  • - Blend for another 10–15 seconds after making adjustments.
  • The ideal flavour should be fruity, tangy and gently spicy.

Step 6: Prepare The Chilli-Lime Glass Rim

  • - Pour the chilli-lime seasoning onto a small, shallow plate.
  • - Rub a lime wedge around the rim of each serving glass.
  • - Turn each glass upside down.
  • - Gently dip the damp rim into the seasoning.
  • - Rotate the glass slightly to create an even coating.
  • - Lift the glass carefully and allow any excess seasoning to fall away.

Step 7: Add The Sparkling Water

  • - Place a handful of ice cubes into each prepared glass.
  • - Divide the mango mixture evenly between the six glasses.
  • - Slowly pour approximately 120ml of chilled sparkling water into each glass.
  • - Stir gently with a long-handled spoon for approximately 5–10 seconds.

Step 8: Garnish And Serve

  • - Add a fresh lime wedge to the rim of each glass.
  • - Place a small sprig of fresh mint on top.
  • - Add a thin slice of fresh chilli for a more dramatic presentation, if desired.
  • - Serve immediately while the drink is cold and fizzy.

Notes

  • Use ripe, fragrant mangoes for the best natural sweetness.
  • Wash the mangoes, mint, and lime thoroughly before preparation.
  • Start with the recommended amount of lime juice and adjust as needed.
  • Honey or sugar is optional, depending on the mangoes' sweetness.
  • Blend the mint briefly to avoid an overpowering flavour.
  • Add chilled water gradually to control the consistency.
  • Straining is optional and depends on your preferred texture.
  • Use frozen mango chunks for a thicker, slushier drink.
  • Add sparkling water immediately before serving if making a fizzy variation.
  • Refrigerate the prepared drink promptly and consume it within 24 hours for the best quality.
  • Stir gently before serving because fruit pulp may settle.
  • Garnish with fresh mint and lime slices for an attractive presentation.
