Equipment

  • 1 Medium-Sized Saucepan Or Kettle
  • 1 Heatproof Jug
  • 1 High-Speed Blenders
  • 1 Fine Mesh Sieve –
  • 1 Citrus Juicer –
  • 1 Sharp Kitchen Knife
  • 1 Chopping Board
  • 1 Long-Handled Spoon
  • 1 Ice Cube Tray
  • 1 Large Serving Pitcher
  • 6 Serving Glasses

Ingredients

  • 2 cups approximately 330g ripe mango chunks — Use peeled and pitted mango flesh. Choose fragrant, fully ripe mangoes for natural sweetness and a beautiful golden colour.
  • 6 black tea bags — Good-quality black tea creates a rich flavour that complements the mango and lemon. Green tea is an alternative.
  • 4 cups 1 litre water — Use fresh drinking water to brew the tea. Add more cold water for a lighter drink.
  • ½ cup fresh lemon juice — approximately 3–4 lemons — Freshly squeezed lemon juice gives the drink its characteristic citrus sharpness.
  • ¼ cup honey or granulated sugar — Adjust according to the sweetness of your mangoes and personal preference.
  • 2 cups ice cubes — Keeps the finished drink cold.
  • 6 fresh mint sprigs — optional — Provides a cooling aroma and attractive garnish.
  • 1 lemon — thinly sliced — Use the slices to decorate the serving pitcher and individual glasses.

Instructions

Step 1: Brew The Tea

  • - Pour 1 litre of fresh water into a kettle or saucepan.
  • - Heat the water until it reaches a boil.
  • - Remove it from the heat and add the six black tea bags.
  • - Allow the tea to steep for approximately 3–5 minutes, depending on how strong you like it.
  • - Remove the tea bags without squeezing them, as squeezing can release additional bitter-tasting compounds.
  • - While the tea is still warm, stir in the honey or sugar until completely dissolved.
  • - Set the tea aside to cool.
  • Important: Avoid steeping the tea for too long. Excessive brewing can produce a bitter taste that overwhelms the delicate mango flavour.

Step 2: Prepare The Mango Purée

  • - Wash the mangoes thoroughly under clean running water.
  • - Peel the skin and carefully remove the stones.
  • - Cut the flesh into small chunks.
  • - Measure approximately two cups of mango flesh.
  • - Transfer the mango chunks into a blender.
  • - Blend for 30–60 seconds until completely smooth.
  • - If you prefer a silky texture, pass the purée through a fine-mesh sieve.
  • - Set aside until needed.
  • The quality of the mango purée makes a noticeable difference to your finished Mango Lemon Iced Tea. Ripe fruit produces a richer flavour and reduces the need for additional sweetener.

Step 3: Extract The Fresh Lemon Juice

  • - Wash the lemons and cut them in half.
  • - Use a citrus juicer to extract the juice.
  • - Remove any seeds.
  • - Measure approximately half a cup of fresh lemon juice.
  • - Set aside a few thin lemon slices for decoration.
  • Freshly squeezed lemon gives this mango lemon tea its distinctive citrus character. Add the juice gradually if you prefer a milder lemon flavour.

Step 4: Combine The Ingredients

  • - Pour the cooled brewed tea into a large serving pitcher.
  • - Add the prepared mango purée.
  • - Pour in the freshly squeezed lemon juice.
  • - Stir thoroughly using a long-handled spoon.
  • - Taste the mixture and adjust the sweetness with additional honey or sugar if necessary.
  • - If the mixture is too concentrated, add a little cold drinking water.
  • - Stir again until all the ingredients are evenly combined.
  • Your Mango Lemon Iced Tea should have a beautiful golden-orange colour, a fruity mango aroma and a refreshing citrus finish.

Step 5: Chill The Drink

  • - Cover the serving pitcher.
  • - Transfer it to the refrigerator.
  • - Allow the mixture to chill for at least 1–2 hours.
  • - Stir again before serving because some mango pulp may naturally settle at the bottom.
  • Chilling gives the flavours time to come together and makes the finished beverage more refreshing.

Step 6: Serve And Garnish

  • - Fill six clean serving glasses with ice cubes.
  • - Pour the chilled Mango Lemon Iced Tea into each glass.
  • - Add a thin lemon slice to the rim or inside each glass.
  • - Garnish with fresh mint leaves if desired.
  • - Serve immediately while cold.

Notes

  • Use ripe, sweet mangoes for the best natural flavour.
  • Brew black tea for 3–5 minutes to prevent bitterness.
  • Allow the brewed tea to cool before mixing it with the mango purée.
  • Freshly squeezed lemon juice gives the best citrus flavour.
  • Adjust the sweetness and acidity to suit your taste.
  • Strain the mango purée if you prefer a smoother texture.
  • Refrigerate for 1–2 hours before serving.
  • Add ice cubes directly to individual glasses rather than the main pitcher.
  • Stir the drink before pouring because the mango pulp may settle.
  • Use green tea or caffeine-free herbal tea for alternative versions.
  • Refrigerate leftovers promptly and enjoy within 2–3 days.
