Equipment

  • 1 High-speed blender
  • 1 Sharp Chef’s Knife
  • 1 Chopping Board
  • 1 Vegetable Peeler Or Small Spoon
  • 1 Fine-Mesh Sieve, Optional
  • 1 Measuring Jug And Measuring Spoons
  • 1 Large Serving Jug
  • 1 Six Drinking Glasses
  • 1 Long-Handled Spoon

Ingredients

  • 3 Large Ripe Mangoes
  • 25–30 g Fresh Ginger Root
  • 2 Tablespoons Fresh Lime Juice
  • 750 ml Cold Drinking Water
  • 1–2 Tablespoons Honey Or Sugar - Optional
  • 1 Cup Ice Cubes - Optional
  • 6 Fresh Mint Sprigs - Optional

Instructions

Step 1: Prepare The Mangoes

  • - Wash the mangoes thoroughly under clean running water and dry them with a clean kitchen towel.
  • - Use a sharp knife to slice the flesh away from the large, flat stones.
  • - Score the flesh into cubes without cutting through the skin, then scoop the cubes out with a spoon.
  • - Remove any remaining flesh around the stones and discard the stones and skins.

Step 2: Prepare The Fresh Ginger

  • - Rinse the ginger root thoroughly to remove any soil.
  • - Peel away the thin skin using a vegetable peeler or teaspoon.
  • - Cut the ginger into small pieces to help the blender process it more easily.
  • Ginger has a naturally strong flavour, so start with a modest quantity and adjust after tasting the juice.

Step 3: Blend The Ingredients

  • - Add the prepared mango flesh, chopped ginger, lime juice and approximately 500 ml of cold water to the blender.
  • - Secure the lid firmly and blend for 45–60 seconds, or until the mixture looks smooth.
  • - Stop the blender and check the consistency. If the juice is too thick, add the remaining water gradually.
  • - Blend for another 15–30 seconds to distribute the ingredients evenly.
  • The blending time will depend on your appliance. The finished mixture should combine the mango’s sweetness with the ginger’s warm, zesty flavour.

Step 4: Strain The Juice If Desired

  • - Place a fine-mesh sieve over a clean jug.
  • - Pour the blended mixture through the sieve in batches.
  • - Use the back of a spoon to gently press the liquid through if necessary.
  • - Discard the fibrous residue or compost it.
  • Straining is optional. For a thicker drink with more fruit pulp, serve the juice directly from the blender. Leaving the pulp in also retains more of the fruit’s fibre.

Step 5: Adjust The Flavour

  • - Taste the juice before adding any sweetener.
  • - If the mangoes are slightly tart, stir in one tablespoon of honey or sugar and taste again.
  • - Add a little more lime juice if you prefer extra tanginess.
  • - If the ginger flavour is too strong, blend in additional mango or a small splash of water.
  • The key to excellent Mango Ginger Juice is balance. Mango should remain the main flavour, while ginger adds a pleasant kick without overpowering the fruit.

Step 6: Chill And Serve

  • - Transfer the finished juice to a clean serving jug.
  • - Refrigerate for approximately 20–30 minutes if the ingredients were not already chilled.
  • - Stir well before serving.
  • - Pour into six glasses and garnish with mint leaves or a small mango slice, if desired.

Notes

  • 🥭 Choose Ripe Mangoes: Use sweet, juicy mangoes for the best flavour and natural sweetness.
  • 🌿 Adjust the Ginger: Start with 20–25 g of fresh ginger and add more if you prefer a stronger, spicier taste.
  • 🍯 Sweeten To Taste: Taste the juice before adding honey or sugar; ripe mangoes may be sweet enough on their own.
  • 🍋 Balance The Flavour: Add fresh lime juice gradually for a bright, zesty finish.
  • 💧 Adjust The Consistency: Add cold water little by little until the juice reaches your preferred thickness.
  • 🧺 Strain If Desired: Use a fine-mesh sieve for a smoother drink, or leave the pulp in for extra texture.
  • 🧊 Serve Chilled: Refrigerate before serving or blend with a few ice cubes for a refreshing finish.
  • 🫙 Store Safely: Keep leftovers in a clean, airtight container in the refrigerator at 4°C or below and consume within 24–48 hours.
