- 2 large ripe mangoes
- 150 g feta cheese
- 1 tablespoon honey
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh mint - finely chopped
- ΒΌ teaspoon freshly ground black pepper
- 1 tablespoon extra-virgin olive oil
- A small pinch of sea salt
- Fresh mint or basil leaves - for garnish
- 1β2 teaspoons balsamic glaze - optional
- 2 tablespoons toasted pistachios - optional
- A pinch of chilli flakes - optional
Step 1: Choose And Prepare The Mango
Wash and dry the mangoes.
Cut the mangoes around the stones.
Peel the mango halves.
Cut the flesh into approximately 2β3 cm cubes or small, neat rectangles.
Pat the mango gently with kitchen paper if particularly juicy.
Step 2: Prepare The Feta
Drain the feta and remove any excess brine.
Pat the cheese gently with kitchen paper.
Cut the feta into pieces similar in size to the mango.
If the feta is very crumbly, gently shape small portions with your fingers.
Step 3: Make The Lime Dressing
Add the lime juice to a small mixing bowl.
Add the honey, olive oil and black pepper.
Whisk for approximately 20β30 seconds until glossy and well combined.
Taste and adjust the lime or honey if necessary.
Step 4: Add The Fresh Herbs
Finely chop the mint.
Reserve a few whole leaves for garnish.
Add most of the chopped mint to the dressing.
Stir gently to combine.
Substitute fresh basil if preferred.
Step 5: Dress The Mango
Place the mango pieces in a large mixing bowl.
Pour the lime-and-honey dressing over the mango.
Toss gently with a silicone spatula or large spoon.
Allow the mango to sit for approximately 3β5 minutes.
Step 6: Assemble The Bites
Place a piece of feta on the serving platter.
Add a piece of dressed mango beside or on top of it.
Add a small mint or basil leaf.
Secure with a cocktail pick if desired.
Repeat until all the ingredients are assembled.
Step 7: Add The Finishing Touches
Drizzle lightly with balsamic glaze if using.
Sprinkle with chopped toasted pistachios.
Add a small pinch of chilli flakes if desired.
Scatter fresh herb leaves around the platter.
Step 8: Chill And Serve
Refrigerate the assembled Mango Feta Bites for approximately 10β15 minutes if desired.
Remove shortly before serving.
Add the final herb garnish.
Serve while the mango is fresh, juicy and chilled.
