Ingredients
  

  • cups desiccated coconut
  • ¾ cup mango purée
  • ½ cup sweetened condensed milk
  • ¼ teaspoon ground cardamom
  • ½ teaspoon lime zest - Optional
  • 2 tablespoons finely chopped pistachios - Optional

Instructions
 

Step 1: Prepare The Mango

  • Peel the mangoes, remove the stones and roughly chop the flesh.
  • Add the mango pieces to a blender or food processor.
  • Blend until completely smooth.
  • Measure out ¾ cup mango purée and set aside.

Step 2: Toast The Coconut

  • Place a deep saucepan over low heat.
  • Add 1 cup of the desiccated coconut.
  • Stir continuously for approximately 2 minutes.
  • Remove from the heat once fragrant, without allowing the coconut to brown.

Step 3: Add The Mango

  • Pour the mango purée into the saucepan with the toasted coconut.
  • Stir thoroughly to combine.
  • Add the ground cardamom if using.
  • Add the lime zest if using.

Step 4: Add The Condensed Milk

  • Pour in the ½ cup sweetened condensed milk.
  • Stir continuously over low heat.
  • Cook for approximately 5–7 minutes.
  • Continue stirring until the mixture becomes thick, fudgy and dough-like.
  • Scrape the bottom and sides of the saucepan regularly to prevent sticking.

Step 5: Cool The Mixture

  • Remove the saucepan from the heat.
  • Transfer the mixture to a clean bowl if preferred.
  • Allow it to cool until warm enough to handle comfortably.
  • Do not shape the mixture while it is dangerously hot.

Step 6: Shape The Bites

  • Place the remaining ½ cup desiccated coconut in a shallow bowl.
  • Pinch off a small portion of the mango mixture.
  • Roll it gently between your palms to form a smooth ball.
  • Roll the ball through the reserved coconut until completely coated.
  • Place it on a plate or tray.
  • Repeat with the remaining mixture, keeping the bites similar in size.

Step 7: Refrigerate And Serve

  • Place the finished Mango Coconut Bites in the refrigerator.
  • Chill until firm.
  • Arrange on a serving plate.
  • Finish with an extra sprinkle of coconut or finely chopped pistachios if desired.
