- 2 large ripe mangoes
- ½ large baguette
- 250 g burrata
- 10 large fresh basil leaves
- 1 small garlic clove
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon white balsamic reduction
- ⅛ teaspoon fine salt
- ⅛ teaspoon freshly cracked black pepper
- 1 teaspoon fresh lemon juice - optional
Step 1: Prepare The Mango
Peel the mangoes and remove the flesh from the stones.
Dice the mango into small, even pieces.
Place the diced mango in a large mixing bowl.
Step 2: Add The Fresh Flavours
Finely mince the garlic.
Julienne the basil leaves.
Add the garlic and basil to the mango.
Pour in 1 tablespoon of olive oil.
Add the white balsamic reduction, salt and black pepper.
Add the lemon juice if using.
Step 3: Mix The Topping Gently
Gently fold the ingredients together with a spoon.
Avoid vigorous stirring to prevent the mango from breaking apart.
Taste and adjust the salt, pepper or lemon juice if needed.
Allow the mixture to rest for approximately 10 minutes.
Step 4: Prepare The Baguette
Slice the baguette into thin rounds.
Heat a large frying pan over medium heat.
Add the remaining olive oil.
Arrange the bread slices in a single layer.
Toast for approximately 2–3 minutes on each side until crisp and golden.
Turn the slices carefully with kitchen tongs.
Step 5: Add The Burrata
Remove the toasted baguette slices from the pan.
Allow them to cool slightly.
Tear or spoon small portions of burrata over each slice.
Spread gently without pressing too firmly.
Step 6: Assemble The Mango Bruschetta
Spoon the mango mixture over each piece of burrata.
Keep the topping centred so the bruschetta remains easy to pick up.
Add a small drizzle of balsamic reduction if desired.
Finish with basil ribbons or a small basil leaf.
Step 7: Serve Immediately
Arrange the Mango Bruschetta on a serving platter in a single layer.
Add freshly cracked black pepper if desired.
Serve immediately while the baguette remains crisp.
