Ingredients
  

  • 3 Ripe Mangoes - About 600–700g Prepared
  • 300 g Fresh Strawberries
  • 150 g Fresh Raspberries
  • 3 Kiwi Fruits
  • 250 g Fresh Pineapple Chunks
  • 1 Tablespoon Fresh Lemon Juice
  • 1 –2 Teaspoons Honey
  • 2 Tablespoons Fresh Mint Leaves -nOptional
  • Tiny Pinch Of Salt - Optional

Instructions
 

Step 1: Prepare The Mango

  • - Wash and dry the mangoes.
  • - Slice away the cheeks and remove the flesh from the stones.
  • - Cut the mango into bite-sized cubes.
  • - Alternatively, peel the mangoes before dicing.

Step 2: Prepare The Strawberries

  • - Remove the leafy tops from the strawberries.
  • - Halve small strawberries and quarter larger ones.
  • - Remove any bruised or overly soft pieces.

Step 3: Prepare The Kiwi And Pineapple

  • - Peel the kiwi fruits and cut them into bite-sized pieces.
  • - Remove the skin and tough core from the fresh pineapple.
  • - Cut the pineapple into small chunks.
  • - If using tinned pineapple, drain it thoroughly.

Step 4: Combine The Main Fruit

  • - Add the mango, strawberries, raspberries, kiwi and pineapple to a large mixing bowl.
  • - Gently fold the ingredients together using a large serving spoon.
  • - Avoid vigorous stirring to keep the berries intact.

Step 5: Make The Citrus Dressing

  • - Combine the lemon juice and honey in a small bowl.
  • - Stir until blended.
  • - Adjust the honey according to the sweetness of the fruit.

Step 6: Dress The Salad

  • - Drizzle the citrus mixture over the fruit.
  • - Gently fold until the fruit is lightly coated.
  • - Take care not to crush the raspberries or mango.

Step 7: Add Fresh Mint

  • - Tear or finely slice the mint leaves if using.
  • - Gently fold them through the salad.

Step 8: Chill Before Serving

  • - Cover the bowl and refrigerate for approximately 20–30 minutes.
  • - Keep the salad chilled until ready to serve.

Step 9: Serve And Enjoy

  • - Give the Mango Berry Salad one final gentle fold.
  • - Transfer it to a serving bowl.
  • - Garnish with a few berries and fresh mint leaves if desired.
  • - Serve chilled.
