Ingredients
  

  • 250 g elbow macaroni
  • 2 large eggs
  • cup diced celery
  • cup diced red bell pepper
  • cup diced or grated carrot
  • cup diced pickles
  • 2 tablespoons finely diced red onion
  • 2 tablespoons sliced spring onion
  • cup mayonnaise
  • cup sour cream
  • tablespoons white vinegar or lemon juice
  • teaspoons pickle juice
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions
 

Step 1: Cook The Macaroni

  • Bring a large saucepan of salted water to a rolling boil.
  • Add the macaroni and cook according to the packet instructions until tender but still slightly firm.
  • Drain thoroughly in a colander.
  • Rinse under cold running water until completely cooled, then drain well.

Step 2: Prepare The Eggs And Vegetables

  • Dice the celery, red bell pepper, carrot, red onion and pickles into small, even pieces.
  • Slice the spring onion finely.
  • Hard-boil the eggs, cool them under cold water, peel and chop.

Step 3: Combine The Salad Ingredients

  • Place the cooled macaroni in a large mixing bowl.
  • Add the chopped eggs, celery, red pepper, carrot, pickles, red onion and spring onion.
  • Gently fold everything together without breaking the pasta.

Step 4: Make The Creamy Dressing

  • Add the mayonnaise, sour cream, vinegar or lemon juice, pickle juice, Dijon mustard, salt and black pepper to a small mixing bowl.
  • Whisk until smooth and creamy.
  • Taste and adjust the acidity or seasoning if needed.

Step 5: Dress The Salad

  • Pour the dressing over the macaroni mixture.
  • Gently fold until all the ingredients are evenly coated.
  • Avoid vigorous stirring to keep the macaroni and vegetables intact.

Step 6: Chill Before Serving

  • Cover the Macaroni Salad and refrigerate for at least 30 minutes.
  • For deeper flavour, chill it for several hours or overnight.
  • Stir gently before serving and adjust the seasoning with salt, pepper or a little lemon juice if needed.
