Instructions
Step 1: Cook The Pasta Perfectly
Fill a large saucepan with plenty of water and bring it to a rolling boil.
Add a generous pinch of salt to season the pasta as it cooks.
Add the fusilli pasta and cook according to the package instructions until al dente (firm to the bite), usually 10–12 minutes.
Avoid overcooking, as soft pasta can become mushy once mixed with the dressing.
Step 2: Drain And Cool The Pasta
Pour the cooked pasta into a colander and drain thoroughly.
Rinse immediately under cold running water to stop the cooking process.
Shake the colander well to remove as much excess water as possible.
Leave the pasta to cool completely before assembling the Italian Pasta Salad.
Excess water will dilute the dressing, so allow the pasta to drain thoroughly.
Step 3: Prepare The Fresh Vegetables
Slice the cherry tomatoes into halves.
Dice the cucumber into bite-sized pieces.
Chop the red and yellow peppers into small cubes.
Thinly slice the red onion.
Finely chop the fresh parsley.
Drain the olives if necessary.
Aim to cut all the vegetables into similar sizes so every bite of Italian Pasta Salad contains a perfect balance of ingredients.
Step 4: Prepare The Homemade Dressing
Pour the extra virgin olive oil into a small bowl.
Add the lemon juice.
Stir in the white wine vinegar.
Add the minced garlic.
Sprinkle in the Italian herbs.
Season with salt.
Add freshly ground black pepper.
Finish with the honey.
Whisk everything together until the dressing becomes smooth, glossy and well combined.
Taste the dressing before adding it to the salad and adjust the seasoning if needed.
Step 5: Assemble The Italian Pasta Salad
Transfer the cooled pasta to a large mixing bowl.
Add the tomatoes.
Add the cucumber.
Mix in both peppers.
Add the sliced onion.
Stir in the olives.
Add the mozzarella balls.
Sprinkle over the chopped parsley.
Take a moment to admire the colourful mixture before adding the dressing.
Step 6: Add The Dressing
Slowly pour the homemade dressing evenly over the salad.
Using a wooden spoon or silicone spatula, gently fold everything together.
Continue folding until every ingredient is evenly coated.
Avoid vigorous stirring, as it may break the mozzarella or crush the vegetables.
Step 7: Chill Before Serving
Cover the bowl with cling film or a lid.
Refrigerate the Italian Pasta Salad for at least 30 minutes.
If time allows, chill for 2–3 hours for an even richer flavour.
This resting time allows the dressing to soak into the pasta and vegetables.
Step 8: Garnish And Serve
Sprinkle with extra chopped parsley.
Add a few extra mozzarella balls if desired.
Garnish with additional olives for presentation.
Serve chilled with lemon wedges on the side.
Notes
🍝 Cook the pasta until al dente to ensure it holds its shape and texture after mixing with the dressing.
❄️ Rinse the cooked pasta under cold water immediately to stop the cooking process and cool it quickly.
🥗 Chill the Italian Pasta Salad for at least 30 minutes before serving to allow the flavours to blend beautifully.
🫒 Use good-quality extra virgin olive oil and fresh lemon juice for the most flavourful homemade dressing.
🍅 Fresh, ripe vegetables provide the best taste, colour and crunch—avoid overripe tomatoes or soft cucumbers.
🧀 Add the mozzarella just before gently tossing the salad to help keep the cheese intact.
🧂 Taste the salad after chilling and adjust the seasoning with a little extra salt, black pepper or lemon juice if needed.
🌿 Fresh parsley or basil makes an excellent garnish and adds a burst of freshness before serving.
🍗 For a heartier meal, add grilled chicken, prawns, tuna or salami.
📦 Store leftovers in an airtight container in the refrigerator for up to 4 days. Stir well before serving and refresh with a splash of olive oil if the pasta has absorbed the dressing.
🚫 Freezing is not recommended, as the vegetables and cheese lose their texture once thawed.
