  • ½ Red Onion – Thinly sliced for a mild bite.
  • 150 g Black Olives – Delivers classic Italian flavour.
  • 200 g Mini Mozzarella Balls – Soft creamy and satisfying.
  • ¼ Cup Fresh Parsley – Finely chopped for freshness.

For The Dressing

  • 120 ml Extra Virgin Olive Oil – Creates a silky dressing.
  • 2 tbsp Lemon Juice – Adds brightness.
  • 2 tbsp White Wine Vinegar – Balances the flavours.
  • 2 Garlic Cloves – Minced for bold flavour.
  • 2 tsp Italian Herbs – Adds authentic seasoning.
  • 1 tsp Sea Salt – Enhances every ingredient.

Instructions
 

Step 1: Cook The Pasta Perfectly

  • Fill a large saucepan with plenty of water and bring it to a rolling boil.
  • Add a generous pinch of salt to season the pasta as it cooks.
  • Add the fusilli pasta and cook according to the package instructions until al dente (firm to the bite), usually 10–12 minutes.
  • Avoid overcooking, as soft pasta can become mushy once mixed with the dressing.

Step 2: Drain And Cool The Pasta

  • Pour the cooked pasta into a colander and drain thoroughly.
  • Rinse immediately under cold running water to stop the cooking process.
  • Shake the colander well to remove as much excess water as possible.
  • Leave the pasta to cool completely before assembling the Italian Pasta Salad.
  • Excess water will dilute the dressing, so allow the pasta to drain thoroughly.

Step 3: Prepare The Fresh Vegetables

  • Slice the cherry tomatoes into halves.
  • Dice the cucumber into bite-sized pieces.

Step 6: Add The Dressing
