Ingredients
  

  • 6 medium beetroot
  • 90 g fresh goat's cheese
  • ½ cup fresh mint leaves
  • 3 tablespoons slivered almonds
  • tablespoons olive oil - extra-virgin
  • tablespoons balsamic glaze
  • Sea salt flakes - to taste
  • Freshly ground black pepper - to taste

Instructions
 

🔥 Step 1: Preheat The Oven

  • Preheat your oven to 200°C.
  • If using a fan-assisted oven, adjust the temperature according to your oven's usual conversion.
  • Make sure the oven is fully heated before roasting the beetroot for even cooking.

🟣 Step 2: Prepare The Beetroot

  • Trim the beetroot, removing the leaves and stems.
  • Wash the beetroot thoroughly under cold running water, scrubbing away any dirt.
  • Keep the skin on during roasting to help retain moisture and flavour.

🧻 Step 3: Wrap The Beetroot

  • Place each beetroot on a piece of aluminium foil.
  • Wrap each one loosely but securely.
  • Arrange the wrapped beetroot in a baking dish or rimmed baking tray.

⏱️ Step 4: Roast Until Tender

  • Roast the beetroot for approximately 45–60 minutes.
  • Smaller beetroot may cook sooner, while larger roots can require additional time.
  • Test for doneness by inserting a skewer or small knife into the centre. It should slide in easily.
  • If the beetroot is still firm, continue roasting and check again after 10 minutes.

  • Carefully open the foil parcels and allow the beetroot to cool enough to handle.
  • Trim away the root and remaining stem.
  • Rub away the skin gently using your fingers or kitchen paper.
  • Use a small knife to remove any stubborn pieces of skin.
  • Wear disposable gloves if desired, as beetroot can stain your hands.

  • Place the slivered almonds in a dry frying pan over medium heat.
