1 Large baking dish or rimmed tray
Aluminium foil
1 Dry Frying Pan-
1 Wooden Spoon or Silicone Spatula:
1 Large Serving Platter –
- 6 medium beetroot
- 90 g fresh goat's cheese
- ½ cup fresh mint leaves
- 3 tablespoons slivered almonds
- 2½ tablespoons olive oil - extra-virgin
- 2½ tablespoons balsamic glaze
- Sea salt flakes - to taste
- Freshly ground black pepper - to taste
🔥 Step 1: Preheat The Oven
Preheat your oven to 200°C.
If using a fan-assisted oven, adjust the temperature according to your oven's usual conversion.
Make sure the oven is fully heated before roasting the beetroot for even cooking.
🟣 Step 2: Prepare The Beetroot
Trim the beetroot, removing the leaves and stems.
Wash the beetroot thoroughly under cold running water, scrubbing away any dirt.
Keep the skin on during roasting to help retain moisture and flavour.
🧻 Step 3: Wrap The Beetroot
Place each beetroot on a piece of aluminium foil.
Wrap each one loosely but securely.
Arrange the wrapped beetroot in a baking dish or rimmed baking tray.
⏱️ Step 4: Roast Until Tender
Roast the beetroot for approximately 45–60 minutes.
Smaller beetroot may cook sooner, while larger roots can require additional time.
Test for doneness by inserting a skewer or small knife into the centre. It should slide in easily.
If the beetroot is still firm, continue roasting and check again after 10 minutes.
🌡️ Step 5: Cool And Peel The Beetroot
Carefully open the foil parcels and allow the beetroot to cool enough to handle.
Trim away the root and remaining stem.
Rub away the skin gently using your fingers or kitchen paper.
Use a small knife to remove any stubborn pieces of skin.
Wear disposable gloves if desired, as beetroot can stain your hands.
🌰 Step 6: Toast The Almonds
Place the slivered almonds in a dry frying pan over medium heat.
Stir or shake the pan frequently so they toast evenly.
Cook until lightly golden and fragrant, taking care not to burn them.
Transfer the almonds to a plate immediately and allow them to cool.
🔪 Step 7: Slice The Beetroot
Place the peeled beetroot on a chopping board.
Cut into slices approximately 1 cm thick.
Arrange the slices across a large serving platter, slightly overlapping them.
Leave enough space between the pieces for the toppings to be distributed evenly.
🧀 Step 8: Add The Goat's Cheese
Crumble the goat's cheese into small pieces.
Scatter it evenly over the roasted beetroot.
Avoid pressing the cheese down so it retains its creamy texture and attractive appearance.
🌿 Step 9: Add The Mint And Almonds
Finely shred the fresh mint leaves just before assembling the salad.
Scatter the mint evenly over the beetroot and goat's cheese.
Add the toasted almonds for a delicious nutty crunch.
Distribute the toppings evenly so every serving gets a combination of flavours and textures.
🫒 Step 10: Dress, Season And Serve
Drizzle the extra-virgin olive oil lightly over the Goat's Cheese Beetroot Salad.
Season with sea salt flakes and freshly ground black pepper.
Finish with the balsamic glaze, drizzling it evenly across the platter.
Serve immediately for the best combination of tender beetroot, creamy goat's cheese, crisp almonds and fresh mint.
