- 680 g fresh carrots
- 135 ml olive oil
- 60 ml rice vinegar
- 1½ teaspoons salt
- ¾ teaspoon ground black pepper
- 2¼ tablespoons granulated sugar
- 1½ teaspoons ground cumin
- 4 garlic cloves - minced
- ¾ teaspoon freshly grated ginger
- Fresh coriander - for garnishing
- Sesame seeds - for garnishing
- Wonton strips - optional
Step 1: Prepare The Carrots
Wash the carrots thoroughly under cool running water.
Peel the carrots and trim away both ends.
Use a julienne peeler or slicer to cut the carrots into thin, even strips.
Place the prepared carrots in a large mixing bowl.
Step 2: Prepare The Ginger And Garlic
Peel and finely grate the fresh ginger.
Peel and finely mince the garlic cloves.
Set both aside while preparing the dressing.
Step 3: Make The Tangy Dressing
Add the olive oil, rice vinegar, salt, black pepper, sugar, cumin, minced garlic, and grated ginger to a small mixing bowl.
Whisk thoroughly until everything is well combined and the sugar and salt are evenly distributed.
Step 4: Dress The Carrots
Pour the dressing over the julienned carrots.
Toss thoroughly using salad tongs or two large spoons.
Continue tossing until all the carrot strips are evenly coated.
Step 5: Marinate The Salad
Transfer the dressed carrots to an airtight food container.
Refrigerate for at least 6 hours.
