- 2 cups Freekeh
- 5 cups Water or Vegetable Stock
- 1 Large Cucumber - Diced
- 2 Cups Cherry Tomatoes - Halved
- 1 Small Red Onion - Finely Chopped
- 1 Cup Fresh Parsley - Chopped
- ½ Cup Fresh Mint - Chopped
- Juice of 2 Lemons
- ⅓ Cup Olive Oil - Extra Virgin
- 1 Teaspoon Sea Salt
- ½ Teaspoon Freshly Ground Black Pepper
- ½ Cup Pomegranate Seeds
- ½ Cup Toasted Pistachios - Roughly Chopped
- 100 g Crumbled Feta Cheese - Optional
- 1 Teaspoon Lemon Zest
Step 1: Rinse The Freekeh
Place the freekeh into a fine-mesh sieve.
Rinse thoroughly under cold running water to remove any dust or loose grains.
Allow the water to drain completely before cooking.
Step 2: Cook The Freekeh
Pour the water or vegetable stock into a medium saucepan and bring it to a boil.
Stir in the rinsed freekeh.
Reduce the heat to low and cover with a lid.
Simmer for 20–25 minutes, or until the grains are tender but still pleasantly chewy.
Drain off any excess liquid if necessary.
Step 3: Cool The Grain
Transfer the cooked freekeh to a large bowl or tray.
Fluff gently with a fork to separate the grains.
