Equipment

  • 1 Large Mixing Bowl
  • 1 Sharp Chef’s Knife
  • 1 Chopping Board
  • 1 Measuring Spoons
  • 1 Citrus Juicer –
  • 1 Serving Bowl -

Ingredients

  • 3 Large Firm - Ripe Mangoes
  • ½ Cup Jicama - Diced
  • ½ Cup Red Bell Pepper - Diced
  • 3 Tablespoons Fresh Lime Juice
  • 3 Tablespoons Brown Sugar
  • 1 Tablespoon Fresh Coriander - Chopped
  • Pinch Of Fine Salt - Optional

Instructions

Step 1: Prepare The Mangoes

  • - Wash and dry the mangoes thoroughly.
  • - Peel each mango and carefully remove the stone.
  • - Cut the flesh into roughly 1–1.5 cm cubes.
  • - Keep the cubes reasonably uniform so the salad looks polished and each spoonful contains a balanced mixture.

Step 2: Prepare The Jicama

  • - Peel the jicama and remove any tough outer skin.
  • - Cut it into small, even cubes.
  • - If you prepare it before the other ingredients, keep it covered so it remains crisp.

Step 3: Prepare The Red Pepper

  • - Wash the red pepper and remove the stalk and seeds.
  • - Dice the pepper into small pieces similar in size to the jicama.
  • - Keep the pieces small enough to provide crunch without overpowering the fruit.

Step 4: Make The Lime Mixture

  • - Pour 3 tablespoons of freshly squeezed lime juice into a small bowl.
  • - Add the brown sugar.
  • - Stir thoroughly until the sugar begins to dissolve.
  • - If using coriander, chop it finely and set it aside.

Step 5: Combine The Ingredients

  • - Place the cubed mangoes in a large mixing bowl.
  • - Add the diced jicama and red pepper.
  • - Pour the lime-and-sugar mixture over the ingredients.
  • - Add the chopped coriander if desired.

Step 6: Fold Everything Together

  • - Use a large spoon or soft spatula to gently fold the ingredients together.
  • - Avoid vigorous stirring because ripe mango can bruise or break apart.
  • - Continue folding until the lime mixture lightly coats the fruit and vegetables.

Step 7: Chill Or Serve Immediately

  • - Serve the Fiesta Fresh Mango Salad immediately for maximum crispness.
  • - Alternatively, cover it and refrigerate it for several hours before serving.
  • - Allow it to sit for a few minutes outside the refrigerator before serving if it becomes very cold.

Notes

  • 🥭 Best Mangoes: Use ripe but firm mangoes so the cubes hold their shape and do not become mushy.
  • 🍋 Fresh Lime: Freshly squeezed lime juice gives the salad a bright, zesty flavour.
  • 🌱 Keep It Crisp: Prepare the jicama and red pepper shortly before serving for the best crunch.
  • 🥄 Mix Gently: Fold the ingredients carefully to prevent the mango from breaking apart.
  • ❄️ Chill Before Serving: Refrigerate for a few hours if you prefer the salad extra cool and refreshing.
  • 🌶️ Add Heat: For a spicy twist, add finely chopped fresh chilli or jalapeño.
  • 🥗 Serve Fresh: Fiesta Fresh Mango Salad tastes best when freshly prepared and makes a colourful accompaniment to grilled chicken, fish or prawns.
