For The Salad
- 3 romaine hearts chopped
- 1½ 11- ounce cans Mexican-style corn drained
- 1½ 15- ounce cans black beans drained and rinsed
- 1½ cups pico de gallo
- ¾ cup shredded cheddar or Mexican-style cheese
For The Fiesta Ranch Dressing
- 12 ounces sour cream
- ½ cup salsa
- ¾ ranch seasoning packet
- 1 tablespoon taco seasoning
- 1½ limes juiced
- Up to ½ cup water or buttermilk
Step 1: Prepare The Chicken
