Ingredients
  

For The Mexican Chicken

  • pounds boneless skinless chicken breast or thighs
  • tablespoons taco seasoning
  • limes juiced
  • tablespoons vegetable oil

For The Salad

  • 3 romaine hearts chopped
  • 1½ 11- ounce cans Mexican-style corn drained
  • 1½ 15- ounce cans black beans drained and rinsed
  • cups pico de gallo
  • ¾ cup shredded cheddar or Mexican-style cheese

For The Fiesta Ranch Dressing

  • 12 ounces sour cream
  • ½ cup salsa
  • ¾ ranch seasoning packet
  • 1 tablespoon taco seasoning
  • limes juiced
  • Up to ½ cup water or buttermilk

Instructions
 

Step 1: Prepare The Chicken

  • Slice the chicken breasts horizontally into thin cutlets for even cooking.
  • Place the chicken in a bowl or food-safe resealable bag.
  • Add the taco seasoning and fresh lime juice.
  • Mix thoroughly until the chicken is evenly coated.
  • Allow it to marinate for 10 minutes.

Step 2: Cook The Chicken

  • Heat the vegetable oil in a large skillet over medium heat.
  • Arrange the chicken in a single layer without overcrowding the skillet.
  • Cook for approximately 3–4 minutes on the first side.
  • Flip and cook for another 3–4 minutes, or until fully cooked.
  • Check that the thickest part reaches 165°F/74°C.
  • Transfer the chicken to a clean chopping board and allow it to rest for several minutes.

Step 3: Make The Fiesta Ranch Dressing

  • Add the sour cream, salsa, ranch seasoning, taco seasoning, and lime juice to a small mixing bowl.
  • Whisk until smooth and evenly combined.
  • Gradually add the water or buttermilk, whisking after each addition.
  • Continue until the dressing reaches a thick but pourable consistency.

Step 4: Prepare The Salad Base

  • Add the chopped romaine to a large serving bowl.
  • Scatter the drained Mexican-style corn over the lettuce.
  • Add the rinsed black beans.
  • Spoon the pico de gallo evenly over the salad.
  • Sprinkle the shredded cheddar or Mexican-style cheese on top.

Step 5: Add The Chicken

  • Slice or dice the rested chicken into bite-sized pieces.
  • Arrange the chicken over the salad, distributing it evenly.

Step 6: Dress And Serve

  • Drizzle the Fiesta Ranch dressing over the salad.
  • Gently toss everything together using salad tongs.
  • Taste and adjust with extra lime, salsa, or dressing if desired.
  • Serve immediately while the romaine is fresh and crisp.
