For The Salad
- 4 cups chopped mixed greens
- 2 Persian cucumbers
- 1 cup cherry or grape tomatoes
- ¼ cup diced red onion
- ¼ cup Kalamata olives
- 2 tablespoons fresh parsley
- 6 falafel
- Hummus - to serve
For The Lemon Tahini Dressing
- ¼ cup tahini
- 1 garlic clove
- Juice of 1 fresh lemon
- ¼ teaspoon fresh dill
- ¼ teaspoon fresh parsley
- Fine sea salt - to taste
- Freshly ground black pepper - to taste
- Water - as needed
- 1 tablespoon maple syrup - optional
🧆 Step 1: Prepare The Falafel
If using prepared falafel, cook according to the package instructions until hot and crisp.
For homemade falafel, shape the mixture into balls or patties before cooking.
Air-fry, bake, or pan-fry the falafel until golden brown and crisp on the outside.
Allow the cooked falafel to rest for a few minutes before assembling the Falafel Salad.

Add the tahini, fresh lemon juice, garlic, dill, parsley, salt and black pepper to a small mixing bowl.
Add the maple syrup if using.
