Ingredients
  

For The Salad

  • 6 cups leafy greens
  • 1 cup fresh strawberries
  • 1 cup fresh raspberries
  • cup sliced almonds

For The Jam Vinaigrette

  • cup olive oil
  • ¼ cup fresh lemon juice
  • 3 tablespoons jam
  • 1–2 tablespoons honey
  • 1–2 teaspoons poppy seeds
  • Salt - to taste
  • Black pepper - to taste

Instructions
 

Step 1: Prepare The Greens

  • Wash the leafy greens thoroughly.
  • Drain and dry them well using a salad spinner or clean kitchen towel.
  • Place the dry greens into a large salad bowl.

Step 2: Prepare The Berries

  • Wash the strawberries and raspberries gently.
  • Hull and slice the strawberries.
  • Pat the berries dry.
  • Handle the raspberries carefully to keep them intact.

Step 3: Toast The Almonds

  • Place the sliced almonds in a dry frying pan over medium-low heat.
  • Toast for several minutes, stirring frequently, until lightly golden and fragrant.
  • Remove from the heat and allow to cool.

Step 4: Make The Jam Vinaigrette

  • Add the olive oil, lemon juice, jam, honey, salt, black pepper and poppy seeds to a small jug or bowl.
  • Whisk vigorously until smooth and well combined.
  • Taste and adjust the sweetness, acidity or seasoning if needed.

Step 5: Assemble The Salad

  • Add the strawberries and raspberries to the leafy greens.
  • Scatter over the toasted almonds.
  • Drizzle the jam vinaigrette evenly over the salad.
  • Gently fold everything together using salad tongs.
  • Avoid excessive tossing to prevent crushing the berries.

Step 6: Serve Immediately

  • Serve the Easter Spring Salad immediately after dressing.
  • Garnish with a few extra berries and almonds if desired.
  • Serve alongside your favourite Easter main course.
