Ingredients
  

For the Citrus Salad

  • 3 large oranges
  • large pink grapefruits
  • 1 medium blood orange
  • ¼ teaspoon fine salt
  • ¼ cup fresh mint leaves
  • ½ cup pomegranate arils

For the Pomegranate Dressing

  • 3 tablespoons olive oil - extra-virgin
  • 3 tablespoons pomegranate juice
  • 1 tablespoon red wine vinegar
  • ½ teaspoon honey
  • 1 tablespoon fresh lemon juice

Notes

  • 🍊 Choose Fresh Citrus: Use ripe, juicy oranges, grapefruit and blood oranges for the best flavour, colour and texture.
  • 🔪 Remove The Pith: Carefully remove as much white pith as possible because it can add unwanted bitterness to the Citrus Salad.
