Ingredients
  

For the Chickpea Salad

  • 2 400g cans chickpeas, - drained and rinsed
  • 2 cups cherry tomatoes - halved
  • 1 large cucumber - diced
  • ½ medium red onion - finely diced
  • 1 large red bell pepper - diced
  • ½ cup fresh parsley - chopped
  • ¼ cup fresh basil - chopped
  • 150 g feta cheese - crumbled (optional)
  • ½ cup Kalamata olives - sliced (optional)
  • For the Lemon Dressing
  • 6 tablespoons olive oil -extra virgin
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 2 garlic cloves - minced
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon chilli flakes - optional

Instructions
 

Step 1: Prepare the Chickpeas

  • Open the cans of chickpeas using a can opener.
  • Pour the chickpeas into a colander and rinse thoroughly under cold running water.
  • Allow them to drain well for several minutes to remove excess moisture.
  • Transfer the drained chickpeas into a large mixing bowl.
  • Starting with dry chickpeas helps the dressing coat every ingredient evenly, making your Chickpea Salad taste fresher and more flavourful.

Step 2: Prepare the Vegetables

  • Slice the cherry tomatoes in half.
  • Dice the cucumber into bite-sized pieces.
  • Cut the red bell pepper into small cubes.
  • Finely dice the red onion.
  • Chop the fresh parsley.
  • Finely chop the fresh basil.
  • Add all the prepared vegetables and herbs to the bowl with the chickpeas.
  • The colourful combination of fresh vegetables makes Chickpea Salad visually appealing while adding a wonderful mix of textures and nutrients.

Step 3: Add the Optional Ingredients

  • Sprinkle the crumbled feta cheese over the vegetables.
  • Add the sliced Kalamata olives.

  • In a small mixing bowl, combine the extra virgin olive oil, fresh lemon juice, red wine vinegar, minced garlic, honey, dried oregano, sea salt, black pepper and chilli flakes (if using).
  • Whisk vigorously for about one minute until the dressing is smooth, glossy and well emulsified.

Step 5: Combine Everything

  • Pour the dressing evenly over the salad ingredients.
