- 2 Cups Cooked Brown Rice
- 250 g Cherry Tomatoes - Halved
- 1 Large Cucumber - Diced
- 1 Red Capsicum - Diced
- 1 Yellow Capsicum - Diced
- Β½ Red Onion - Finely Sliced
- 1 Cup Sweetcorn Kernels
- Β½ Cup Black Olives - Sliced
- ΒΌ Cup Fresh Parsley - Chopped
- 2 Tablespoons Fresh Mint - Chopped
- Juice of 1 Large Lemon
- 4 Tablespoons Olive Oil β Extra Virgin
- 1 Teaspoon Sea Salt
- Β½ Teaspoon Freshly Ground Black Pepper
- 1 Garlic Clove - Minced
- 1 Teaspoon Honey - Optional
Step 1: Cook The Brown Rice
Rinse the brown rice thoroughly under cold running water.
Cook according to the packet instructions until tender but still slightly chewy.
Spread the cooked rice on a tray to cool completely before assembling the Brown Rice Salad.
Step 2: Prepare The Vegetables
Slice the cherry tomatoes in half.
Dice the cucumber.
Chop the capsicums into bite-sized cubes.
Thinly slice the red onion.
