- 3 cups sweetcorn
- 1 large red bell pepper
- ½ medium red onion
- ½ cup fresh coriander
- 1 jalapeño
- 1 large ripe avocado
- ½ cup crumbled feta or other cheese
- 2 tablespoons toasted pepitas
- 3 tablespoons fresh lime juice
- 3 tablespoons avocado oil
- 1 garlic clove
- ½ teaspoon ground cumin
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Step 1: Prepare The Black Beans
Place the drained black beans in a colander.
Rinse thoroughly under cool running water.
