Berry Salad Recipe

This vibrant Berry Salad combines juicy strawberries, blueberries, raspberries and blackberries with fresh mint and a zesty honey-lime dressing. Quick, refreshing and naturally colourful, it is perfect for breakfast, picnics, BBQs, brunch or a light dessert.

Ingredients
  

  • 2 cups strawberries
  • cups blueberries
  • cups raspberries
  • cups blackberries
  • 2 tablespoons fresh mint
  • 1 teaspoon lime zest
  • tablespoons fresh lime juice
  • 2–3 tablespoons honey
  • teaspoon salt

Instructions
 

Step 1: Prepare the Berries

  • Place the strawberries, blueberries, raspberries and blackberries in your preparation area.
  • Inspect the fruit and discard any berries that are mouldy, badly bruised or spoiled.
  • Rinse the berries gently under cool running water when you are ready to prepare them.
  • Drain thoroughly and pat them dry with clean kitchen paper or a soft kitchen towel.
  • Hull the strawberries and cut them into quarters or bite-sized pieces.
  • Keep the berries as dry as possible because excess water can dilute the dressing and affect the salad's freshness.

Step 2: Prepare the Mint

  • Rinse the fresh mint and dry it thoroughly.
  • Remove the leaves from any thick stems.
  • Tear the leaves gently with your fingers or chop them very lightly.
  • Reserve a few whole leaves for garnishing.
  • Add the remaining mint to the prepared fruit.

Step 3: Make the Honey-Lime Dressing

  • Place the lime zest, fresh lime juice, 2 tablespoons of honey and salt in a small bowl.
  • Whisk vigorously until the honey is fully incorporated into the lime juice.
  • Taste the dressing carefully.
  • If the berries are slightly tart, add another tablespoon of honey.
  • Avoid making the dressing excessively sweet because the natural flavour of the berries should remain the star.

Step 4: Assemble the Salad

  • Add all the prepared berries to a large mixing bowl.
  • Scatter the torn mint evenly over the fruit.
  • Pour the honey-lime dressing over the berries shortly before serving.
  • Using a large spoon or soft spatula, gently fold the fruit from the bottom upwards.
  • Avoid aggressive stirring because raspberries and ripe blackberries can break apart easily.
  • Continue folding only until the dressing lightly coats the fruit.

Step 5: Chill and Serve

  • If desired, chill the undressed berries in the refrigerator before assembling the salad.
  • Once dressed, transfer the Berry Salad to a clean serving bowl or platter.
  • Scatter the reserved mint leaves over the top.
  • Serve immediately for the freshest texture.
  • The finished Berry Salad can be served chilled or at cool room temperature.
