For The Salad

  • 2 large romaine lettuce hearts chopped – Provides a crisp, refreshing base.
  • 300 g cherry tomatoes halved – Adds sweetness and vibrant colour.
  • 1 medium red onion finely sliced – Offers a pleasant crunch and mild sharpness.
  • 250 g sweetcorn kernels – Adds natural sweetness and texture.
  • 400 g black beans drained and rinsed – Supplies protein and fibre.
  • 2 ripe avocados diced – Makes the salad creamy and satisfying.
  • 200 g grated Cheddar cheese – Adds rich cheesy goodness.
  • 2 fresh jalapeños sliced (optional) – Perfect for those who enjoy a little heat.
  • 20 g fresh coriander chopped – Brightens every bite with fresh herbal flavour.

For The Dressing

  • 120 g sour cream – Creates a creamy tangy dressing.
  • 60 g mayonnaise – Adds richness and smooth texture.
  • 2 tablespoons fresh lime juice – Brightens the flavours beautifully.
  • 1 teaspoon chilli powder – Gives gentle warmth.
  • 1 teaspoon garlic powder – Adds savoury depth.
  • Salt and black pepper to taste – Balances every flavour.

For Garnishing

  • 150 g tortilla chips crushed – Adds irresistible crunch.

Instructions
 

Step 1: Prepare The Vegetables

  • Wash and thoroughly dry the lettuce before chopping it into bite-sized pieces.
  • Slice the cherry tomatoes in half.
  • Thinly slice the red onion.
  • Dice the avocados just before serving to keep them fresh.
  • Chop the coriander finely.
  • Slice the jalapeños if using.
  • Arrange all prepared vegetables separately while you cook the beef.

Step 2: Cook The Beef

  • Heat olive oil in a large frying pan over medium-high heat.
  • Add the minced beef.
  • Break the meat apart using a wooden spoon.
  • Cook for 8–10 minutes, stirring regularly until browned.
  • Drain any excess fat if necessary.

Step 3: Season The Beef

  • Sprinkle the taco seasoning over the cooked beef.
  • Pour in the water.
  • Stir thoroughly until every piece of beef is coated.
  • Simmer gently for 5 minutes until the sauce thickens.
  • Remove from the heat and allow the beef to cool slightly before assembling the salad.
