Ingredients
  

  • 2 Large Heads Romaine Lettuce – Romaine provides a crisp texture that forms the perfect base for the salad.
  • 4 Large Chicken Breasts – Approximately 800g: Use boneless, skinless chicken breasts.
  • 180 ml BBQ Sauce – ¾ Cup: Choose a rich, smoky barbecue sauce with a balance of sweetness and tanginess.
  • 2 Large Avocados – Select ripe but firm avocados.
  • 300 g Cherry Tomatoes - Slice each tomato in half.
  • 250 g Sweetcorn Kernels – Fresh frozen or canned sweetcorn all work well.
  • 400 g Can Black Beans – Drain and rinse well.
  • 1 Medium Red Onion – Slice very thinly.
  • 150 g Mature Cheddar Cheese – Grate or dice into small cubes.
  • 8 Slices Turkey Bacon or Crispy Beef Bacon – Chop into small pieces.
  • ¼ Cup Fresh Coriander – Roughly chop.
  • 150 g Greek Yoghurt – Forms the creamy base of the dressing.
  • 80 g Mayonnaise – Adds richness and creaminess.
  • 2 Tablespoons Fresh Lime Juice – Brightens the dressing.
  • 1 Teaspoon Smoked Paprika – Enhances the smoky barbecue flavour.
  • 1 Teaspoon Salt – Enhances all the natural flavours.
  • ½ Teaspoon Freshly Ground Black Pepper – Adds mild spice and depth.

Instructions
 

Step 1: Prepare The Chicken

  • Pat the chicken breasts dry with kitchen paper to help the seasoning stick.
  • Sprinkle both sides with the smoked paprika, salt and freshly ground black pepper.
  • Heat a grill pan or outdoor barbecue over medium-high heat and lightly oil the cooking surface.
  • Grill the chicken for 6–7 minutes per side, depending on thickness, until the internal temperature reaches 75°C.
  • During the final 2 minutes of cooking, generously brush both sides with the BBQ sauce, allowing it to caramelise without burning.
  • Remove the chicken from the heat and leave it to rest for 5–10 minutes before slicing into bite-sized strips. Resting keeps the meat juicy and tender.

Step 2: Cook The Bacon

  • While the chicken rests, cook the turkey bacon or beef bacon in a frying pan over medium heat until crisp.
  • Transfer to a plate lined with kitchen paper to absorb any excess oil.
  • Once cooled slightly, chop into small pieces ready for the salad.

Step 3: Prepare The Fresh Vegetables

  • Wash the romaine lettuce thoroughly and dry it completely using a salad spinner or a clean kitchen towel.
  • Tear or chop the lettuce into bite-sized pieces and place it into a large salad bowl.
  • Halve the cherry tomatoes.
  • Drain and rinse the black beans until the water runs clear.
  • Drain the sweetcorn if using canned kernels.
  • Thinly slice the red onion.
  • Dice the avocados just before assembling the salad to keep them fresh and vibrant.
  • Roughly chop the fresh coriander.

Step 4: Make The Creamy BBQ Dressing

    In a small mixing bowl, combine:

    • Greek yoghurt
    • Mayonnaise
    • Remaining BBQ sauce
    • Fresh lime juice
    • Whisk until smooth and creamy.
    • Taste the dressing and adjust with a little extra lime juice, salt or pepper if required. The dressing should be creamy with a balanced smoky, sweet and tangy flavour.

    Step 5: Assemble The Salad

    • Arrange the chopped lettuce evenly across a large serving platter or salad bowl.
    • Scatter over the sweetcorn, black beans, tomatoes and sliced red onion.
    • Add the diced avocado evenly around the salad.
    • Sprinkle over the grated cheddar cheese.
    • Top with the crispy chopped bacon.
    • Arrange the sliced BBQ chicken neatly across the centre.
    • Spoon or drizzle the creamy BBQ dressing over the salad just before serving.
    • Finish with freshly chopped coriander for a burst of colour and freshness.

    Step 6: Serve Immediately

    • Serve immediately while the chicken is still slightly warm and the vegetables remain crisp.
    • Toss gently just before eating so every bite is coated with the delicious dressing.
