- 1 Medium Red Onion – Slice very thinly.
- 150 g Mature Cheddar Cheese – Grate or dice into small cubes.
- 8 Slices Turkey Bacon or Crispy Beef Bacon – Chop into small pieces.
- ¼ Cup Fresh Coriander – Roughly chop.
- 150 g Greek Yoghurt – Forms the creamy base of the dressing.
- 80 g Mayonnaise – Adds richness and creaminess.
- 2 Tablespoons Fresh Lime Juice – Brightens the dressing.
- 1 Teaspoon Smoked Paprika – Enhances the smoky barbecue flavour.

Step 1: Prepare The Chicken
Pat the chicken breasts dry with kitchen paper to help the seasoning stick.
Sprinkle both sides with the smoked paprika, salt and freshly ground black pepper.
Heat a grill pan or outdoor barbecue over medium-high heat and lightly oil the cooking surface.
Grill the chicken for 6–7 minutes per side, depending on thickness, until the internal temperature reaches 75°C.
