Ingredients
  

  • 3 large ripe avocados
  • 2 medium red sweet peppers
  • 2 medium yellow sweet peppers
  • 1 medium orange sweet pepper
  • 1 small red onion
  • 3 tablespoons fresh lime juice
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh coriander - chopped
  • 1 teaspoon fine sea salt
  • Β½ teaspoon freshly ground black pepper
  • 1 small fresh chilli - finely sliced (optional)

Instructions
 

Step 1: Prepare The Avocados

  • Cut the avocados lengthways around the stones and carefully remove the stones.
  • Scoop out the flesh and cut it into medium-sized chunks.
  • Place the avocado in a bowl and drizzle with approximately 1 tablespoon of lime juice.
  • Gently turn the pieces to coat them without breaking them apart.

Step 2: Prepare The Sweet Peppers

  • Wash the red, yellow, and orange peppers.
  • Remove the tops, seeds, and white membranes.
  • Slice the peppers into thin strips or small, evenly sized pieces.

Step 3: Prepare The Onion And Herbs

  • Peel and thinly slice the red onion.
  • For a milder flavour, soak the onion in cold water for 5 minutes, then drain thoroughly.
  • Finely chop the coriander.
  • Thinly slice the optional chilli, removing some or all of the seeds for less heat.

Step 4: Make The Zesty Dressing

  • Combine the remaining lime juice, olive oil, sea salt, and black pepper in a small bowl or jar.
  • Whisk or shake for 20–30 seconds until well combined.
  • Taste and adjust the lime juice or salt if needed.

Step 5: Combine The Vegetables

  • Add the red, yellow, and orange peppers to a large mixing bowl.
  • Add the sliced red onion, chopped coriander, and optional chilli.
  • Pour over approximately two-thirds of the dressing.
  • Toss gently until the vegetables are lightly coated.

Step 6: Add The Avocado

  • Add the avocado pieces last.
  • Pour over the remaining dressing.
  • Gently fold the avocado through the peppers until evenly distributed.
  • Avoid vigorous stirring to prevent the avocado from becoming mashed.

Step 7: Rest And Serve

  • Allow the salad to rest for 5–10 minutes.
  • Taste and adjust the seasoning if necessary.
  • Transfer to a serving bowl and garnish with extra coriander if desired.
  • Serve immediately for the freshest texture.
