For The Slaw
- 3 cups green cabbage - shredded
- 1 cup purple cabbage - shredded
- 1 cup carrots - grated
- 1 red bell pepper - thinly sliced
- 4 spring onions - thinly sliced
- ½ cup fresh coriander - chopped
- ¼ cup roasted peanuts - crushed
- 2 tablespoons sesame seeds
For The Dressing
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon fresh ginger - grated
- 1 garlic clove - minced
- ½ teaspoon chilli flakes
- ¼ teaspoon black pepper
Step 1: Prepare The Vegetables
Shred the green and purple cabbage into thin, even strips.
Grate the carrots and thinly slice the red bell pepper and spring onions.
Chop the fresh coriander and set all the vegetables aside.
Step 2: Make The Dressing
Add the rice vinegar, soy sauce, sesame oil, honey, grated ginger, minced garlic, chilli flakes, and black pepper to a small mixing bowl.
Whisk until the honey dissolves and the dressing is smooth and well combined.
Step 3: Combine The Slaw
Add the green cabbage, purple cabbage, carrots, red bell pepper, spring onions, and coriander to a large mixing bowl.
Toss gently to distribute the vegetables evenly.
