Apple Slaw Recipe

Ingredients
  

  • 450 g green cabbage - finely shredded
  • 170 g matchstick carrots
  • 1Β½ large Gala apples - thinly sliced
  • 6 tablespoons sliced spring onions
  • 85 g sliced almonds
  • 85 g dried cranberries
  • 140 g plain Greek yoghurt
  • 60 ml mayonnaise
  • 60 ml honey
  • 30 ml apple cider vinegar
  • Salt - to taste
  • Freshly ground black pepper - to taste
  • 85 g crumbled feta - optional

Instructions
 

Step 1: Prepare The Dressing

  • Add the Greek yoghurt, mayonnaise, honey and apple cider vinegar to a medium mixing bowl.
  • Whisk until smooth and creamy.
  • Season with salt and freshly ground black pepper.
  • Taste and adjust the seasoning if needed.

Step 2: Prepare The Cabbage

  • Remove any damaged outer cabbage leaves.
  • Cut the cabbage into manageable wedges.
  • Finely shred the cabbage into thin strands.
  • Place it in a large mixing bowl.

Step 3: Add The Carrots

  • Add the matchstick carrots to the shredded cabbage.
  • Toss lightly to distribute them evenly.

Step 4: Slice The Apples

  • Wash and dry the apples.
  • Cut them into thin matchsticks or neat slices.
  • Prepare them shortly before assembling the salad to minimise browning.

Step 5: Add The Remaining Ingredients

  • Add the sliced apples, spring onions, almonds and dried cranberries to the cabbage and carrot mixture.
  • If using feta, crumble it over the salad.

Step 6: Dress The Slaw

  • Pour the prepared dressing over the salad.
  • Gently fold everything together using salad tongs or two large spoons.
  • Mix until the dressing evenly coats the cabbage, fruit and vegetables without breaking the apples.

Step 7: Chill Briefly If Desired

  • Cover the Apple Slaw and refrigerate for a short period if desired.
  • Chilling allows the flavours to mingle while keeping the ingredients fresh and crisp.
  • For the best texture, serve within a few hours.
