- 450 g green cabbage - finely shredded
- 170 g matchstick carrots
- 1Β½ large Gala apples - thinly sliced
- 6 tablespoons sliced spring onions
- 85 g sliced almonds
- 85 g dried cranberries
- 140 g plain Greek yoghurt
- 60 ml mayonnaise
- 60 ml honey
- 30 ml apple cider vinegar
- Salt - to taste
- Freshly ground black pepper - to taste
- 85 g crumbled feta - optional
Step 1: Prepare The Dressing
Add the Greek yoghurt, mayonnaise, honey and apple cider vinegar to a medium mixing bowl.
Whisk until smooth and creamy.
Season with salt and freshly ground black pepper.
Taste and adjust the seasoning if needed.
Step 2: Prepare The Cabbage
Remove any damaged outer cabbage leaves.
Cut the cabbage into manageable wedges.
Finely shred the cabbage into thin strands.
